Skirt Steak and Chimichurri Pizza
Putting chimichurri on a pizza is not that much of a stretch, considering it is similar to pesto, but when you put skirt steak on that pizza too, thats where things get interesting. Chimichurri and steak go so well together but steak on a pizza can be hit or miss. I realized the best way to highlight the steak on this pizza was to add it after the pizza comes out of the oven!
The inspiration for this pizza
I was craving pizza big time this week and I had to do something about it. This pizza with chimichurri as the sauce has been on my to-do list for probably about a year, and believe me it was worth the wait. Herby, garlicky, and loaded with olive oil, the chimichurri was a perfect fit on this pizza. I think what took me so long to make it was not knowing what to put with it. When I realized the steak could go on the pizza after it came out of the oven that’s when it came together!
Make the skirt steak
The steak is marinated in some soy sauce, red wine vinegar, worcestershire, honey and other goodness. After a few hours or overnight, grill it on high heat until medium in the middle. Allow to cool before slicing! Make sure to cut it against the grain and really thin so it is very tender when you eat it.
Make the chimichurri
Add some parsley and basil to the food processor and blend it up! Traditionally it would just be parsley but I like to add other herbs sometimes and basil really makes sense on a pizza.
Make the skirt steak chimichurri pizza
Stretch out the dough and top it with the chimichurri. Then add the cheese. Cook at super high heat until cooked and toastie! I don’t really give much actual pizza making direction but if you have a stone and peel this is a good guide.
Finish the pizza
After it comes out of the oven, top it with the sliced steak. Make sure you cut the steak small enough to be bite sized.
I had 4 people over over that night and 3 of them said this was the best!
The first pizzas I made in my new place were a success! The oil and garlic in the chimichurri was so flavorful with the skirt steak and really made this pizza amazing.
Twists on this chimichurri skirt steak pizza
This chimichurri pizza would also be great with chicken instead of skirt steak. You could toss the chicken in with the chimichurri and put it under the cheese. You could also add other herbs to the chimichurri!

Skirt Steak and Chimichurri Pizza
Ingredients
Steak and marinade
- 2 cloves garlic
- 1/4 cup red vinegar
- 2 tablespoons worcestershire
- 2 tablespoons soy sauce
- 2 tablespoons honey
- salt and pepper
- 1/4 cup olive oil
- 1 flank steak
Chimichurri
- 1 bunch fresh parsley
- 1/2 bunch fresh basil
- 5 sprigs fresh oregano
- 2 cloves garlic
- 1/4 cup olive oil
Pizza
- olive oil
- pizza dough
- cheese I used mozzarella, chihuahua and cotija
Instructions
- Add all the marinade ingredients to a bowl or zip top bag. Add the skirt steak and mix it all together. Put into the fridge for at least 3 hours or overnight.
- Grill the steak for about 5 minutes per side on medium high heat to brown on the outsides and cook to medium in the center. Remove from heat and set aside to cool for 10 minutes
- Throw the herbs ,garlic, and oil into a blender or food processor. Blend smooth. Set aside
- Preheat oven as high as it will go. If you are using a pizza steel or stone, preheat it as well.
- Streach the pizza dough and top with the chimichurri. Then add the cheese. Put the pizza in the oven and cook about 10 minutes until browning around the edges.
- While the pizza is in the oven, slice the steak thin against the grain. Chop into bite sized pieces.
- When the pizza comes out, top with the steak and juices and serve.
