Skirt Steak and Chimichurri Pizza
A pizza loaded with chimichurri instead of sauce, and lots of marinated flank steak.

Steak and marinade
- 2 cloves garlic
- 1/4 cup red vinegar
- 2 tablespoons worcestershire
- 2 tablespoons soy sauce
- 2 tablespoons honey
- salt and pepper
- 1/4 cup olive oil
- 1 flank steak
Chimichurri
- 1 bunch fresh parsley
- 1/2 bunch fresh basil
- 5 sprigs fresh oregano
- 2 cloves garlic
- 1/4 cup olive oil
Pizza
- olive oil
- pizza dough
- cheese I used mozzarella, chihuahua and cotija
Add all the marinade ingredients to a bowl or zip top bag. Add the skirt steak and mix it all together. Put into the fridge for at least 3 hours or overnight.
Grill the steak for about 5 minutes per side on medium high heat to brown on the outsides and cook to medium in the center. Remove from heat and set aside to cool for 10 minutes
Throw the herbs ,garlic, and oil into a blender or food processor. Blend smooth. Set aside
Preheat oven as high as it will go. If you are using a pizza steel or stone, preheat it as well.
Streach the pizza dough and top with the chimichurri. Then add the cheese. Put the pizza in the oven and cook about 10 minutes until browning around the edges.
While the pizza is in the oven, slice the steak thin against the grain. Chop into bite sized pieces.
When the pizza comes out, top with the steak and juices and serve.
