Skirt Steak and Chimichurri Pizza

A pizza loaded with chimichurri instead of sauce, and lots of marinated flank steak.

Ingredients

Steak and marinade

  • 2 cloves garlic
  • 1/4 cup red vinegar
  • 2 tablespoons worcestershire
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • salt and pepper
  • 1/4 cup olive oil
  • 1 flank steak

Chimichurri

  • 1 bunch fresh parsley
  • 1/2 bunch fresh basil
  • 5 sprigs fresh oregano
  • 2 cloves garlic
  • 1/4 cup olive oil

Pizza

  • olive oil
  • pizza dough
  • cheese I used mozzarella, chihuahua and cotija

Instructions

  • Add all the marinade ingredients to a bowl or zip top bag. Add the skirt steak and mix it all together. Put into the fridge for at least 3 hours or overnight.
  • Grill the steak for about 5 minutes per side on medium high heat to brown on the outsides and cook to medium in the center. Remove from heat and set aside to cool for 10 minutes
  • Throw the herbs ,garlic, and oil into a blender or food processor. Blend smooth. Set aside
  • Preheat oven as high as it will go. If you are using a pizza steel or stone, preheat it as well.
  • Streach the pizza dough and top with the chimichurri. Then add the cheese. Put the pizza in the oven and cook about 10 minutes until browning around the edges.
  • While the pizza is in the oven, slice the steak thin against the grain. Chop into bite sized pieces.
  • When the pizza comes out, top with the steak and juices and serve.
