Chile Basil Sweet Potato Salad

Chile Basil Sweet Potato Salad

I had a lot of people over this past weekend for a few different reasons so I needed some fun side dishes. I already posted the peach and brussel sprout dish on Monday but this sweet potato salad was also a great entry to the BBQ side dish mix. Chile and basil already go so well together, but it was nice to add the earthy sweet potatoes to the mix to give this simple potato salad a new twist.

First roast the potatoes until tender.
Mix the chile paste with some mayo and lime juice, and mix in the potatoes.
Once that mixture cools, add in the basil.  You want to add it after so it doesn’t wilt.
This is a great twist on a classic potato salad and is a nice new way to serve sweet potatoes!
The herbs and lime make this potato salad taste super fresh.
And sweet potatoes have such a nice earthy deep flavor.

  1. Well damn, I already had a craving for potato salad, so now I REALLY want this. Thankfully the ingredients list is short; I hate recipes that take like 1/4 of a teaspoon of 10 million different ingredients.

  2. I’m really not into spicy foods before but when I tried this recipe, everything changed. Now I’m totally in love with anything spicy!
