Layered Tortilla French Toast Bake

Have you ever had tortilla French toast? I definitely hadn’t until I made this recipe. I was thinking about the flavors of French toast and got so excited to combine it with the texture of tortillas! Wanting to add some cheese, I thought layering mascarpone in between the layers would be a perfect touch. As you eat this skillet of layered French toast goodness, your fork slides through the tender layers of bread, cheese, and eggs! You can shovel that syrupy goodness into your mouth!

I love a great easy baked breakfast dish this time of the year when you inevitably will be having brunch with loved ones and might be feeling a little extra tired from the good times had the night before. Making this layered French toast dish with tortillas and mascarpone cheese, was an easy way to do a spin on stuffed French toast! What a unique dish to share with your friends and family.

Going heavy on the cinnamon and vanilla is kinda my thing when I make pretty much anything that has either of those ingredients in it. This skillet of tortilla French toast awesomeness has layers upon layers of cheesy cinnamon and vanilla goodness.

Let’s make the cheese filling!

In a bowl, stir together mascarpone, cinnamon, and sugar. That’s it! Go light on the sugar if you like it to be balanced between sweet and savory, not overly sweet like many French toasts can be.

Now for the egg dip for the tortillas

Mix together some eggs, cinnamon, and lots of vanilla! This might be a little extra egg mixture in the end, but I would rather have a little too much than not enough. I usually use large eggs so if you use jumbo, you might only need two or three instead of four.

Now lets layer it up!

Dip the tortillas and add them to the skillet one by one, with layers of cheese in between. I also made sure to drizzle in a little extra egg in between the layers.

What if you want to serve Tortilla French Toast to more people?

You could make this in a large skillet with burrito sized tortillas! I suggest this version to serve 2-4 people, but if you make it in a 12 inch skillet it would serve a lot more!

Make sure to give it a nice cheesy layer between each tortilla!

Baking the Tortilla French Toast

After you put all the tortillas in the pan, drizzle on some more egg and get it into the oven! This bakes at 350 for about 30-45 minutes until cooked through. When it comes out of the oven, it will be puffed up like the photo below, but after a few minutes it sinks back down.

Serving the Layered Tortilla French Toast Bake

I like a ton of syrup and butter on my tortilla French toast, but that is how I like any French toast really! You could also add some berries and/or powdered sugar!

Variations on Tortilla French Toast

The fact that this is layered means you could add anything between the layers! I think adding some chorizo to the middle layer would be incredible. I have done chorizo with sweet flavors before in these chorizo sticky buns and it works great! You could also serve it with fried chicken on top like chicken and waffles.

If you want to keep it sweet though, a layer of strawberry jam would be great. You could also top this with whipped cream and lots more berries! Anything on this list of French toast toppings would be a winner from me.

Layered Tortilla French Toast Bake

Ingredients

  • 3 eggs
  • 1/2 cup milk
  • 3 teaspoons cinnamon
  • 2 teaspoons vanilla
  • 1 tablespoon sugar
  • 8 ounces mascarpone cheese
  • 6 Old El Paso Flour Tortillas for Tacos and Fajitas
  • butter and maple syrup

Instructions

  • Preheat the oven to 350
  • Mix the eggs, milk, 2 teaspoons of the cinnamon, the vanilla, and half the sugar in a bowl.
  • In another bowl mix the mascarpone, and remaining cinnamon and sugar. Season both mixtures with salt and pepper.
  • Grease a small skillet or baking dish that is about the same size as the tortillas.
  • Dip a tortilla into the egg mixture and place at the bottom of the dish. Spread some of the cheese on top.
  • Repeat until you have filled the skillet or baking dish. Top with a final egg soaked tortilla and add a few extra spoonfuls of egg mixture to it.
  • Bake at 350 for about 45 minutes until lightly browned on top and cooked through.
  • Cut and serve with lots of butter and syrup.

    very promising, but that is such a wasteful amount of eggs – I wish I had only used 2, or even 1. (Making it this morning)

  2. I didnt have any egg mixture left. I soaked my tortillas each for a while then drizzled a little between each layer by the 5th layer I had enough mixture to pour on top and the circumference of the skillet and let it sit. 3 eggs wasn’t too much for me and I only used 5 tortillas.
