Spicy Tuna Hash Brown Toast
A steaming hot and crispy hash brown used as the toast for spicy tuna?!?!? Sign me up! The perfectly chopped tuna tartare is loaded with sambol, togarashi, and soy sauce and tastes amazing on it’s own, but when you spread it like jam on top of a hash brown fresh out of the frying pan it’s magic in every bite! Top with some nori, scallions, and lots of tobikko for a decadent afternoon treat or a fancy first course at a dinner party.
Inspiration for this recipe
One of my favorite ways to snack is to use a fast food style hash brown as “toast” and top it with some fun and tasty ingredients. I started doing this when I wrote a whole book about tater tots! I recently thought it would be a perfect vehicle for spicy tuna. Crispy breadcrumbs are so good on a spicy tuna roll, so I thought the crispy potato would be a great swap out.

Make the spicy tuna mixture first
Chop up the tuna as small as you can. Use a sharp knife!
Put the tuna in the bowl with some salt, togarashi, sambol, and soy sauce. The last ingredient to add is mayo, then you just mix it up!
Top the hash brown toast with the spicy tuna
Spread it out on top and be generous! The hash brown has a strong texture and flavor so you want to make sure there is enough spicy tuna that it doesn’t get overshadowed.
Then add all the remaining toppings!
Start with the nori and sesame seeds as toppings. I like the nori to touch the fish mixture so they can join forces.
Next add the scallion and tobiko. The scallion is important because it adds a fresh vibrant flavor to the mix. and I just love tobiko! The way it kind of pops in your mouth like a flavor explosion is the best.
I could eat about 25 of these! Unfortunately (or fortunately for my health) this recipe only makes two.
Twists on the spicy tuna hash brown toast
You could make these hash brown toasts with any sushi you like. Add some avocado, crab, and cucumber for a california roll. Do a few different fishes and make a rainbow roll. Cream cheese and smoked salmon for a philly roll. The combinations are endless!

Spicy Tuna Hash Brown Toast
Ingredients
Tuna
- 6 ounces tuna sashimi
- pinch salt
- 1 teaspoon soy sauce
- 1 tablespoon sambol chili paste
- 1 tablespoon mayo
- 1 teaspoon togarachi
Hash Brown and toppings
- 2 fast food style hash browns
- oil for the pan
- scallions
- sesame seeds
- toasted nori
- tobiko
Instructions
- Chop the tuna into small pieces. Mix in all the tuna ingredients and stir to combine.
- Bring a pan to high heat and add the oil. Add in the frozen hash browns and cook for about 3-5 minutes per side to crisp up and heat through.
- Top the hash browns with the tuna mixture. Then top with the nori, sesame seeds, scallions, and tobiko. Serve
