Cranberry and Kale Grilled Cheese
I put cranberry in everything this time of the year. You guys know how much I love tart and sour flavors, and cranberry is just a different way for me to hit those flavors in the Fall. A friend of mine was coming over for lunch and we decided on grilled cheeses, and I obviously decided they needed to have cranberry. I wanted to keep it simple so the only other thing I added was kale and a little bit of habanero for a kick. We both agreed it was the best grilled cheese we had had in a while!
The cranberries are simmered with honey and habanero until the chunky sauce is formed. Spread it on the bread after you put on the first layer of cheese.
The kale is just sauteed with a little oil and salt before it is added to the sandwich.
Cook with a little butter until both sides are nice and brown and the cheese is melted. I like to use a cover even though I am cooking them on a flat grill. Just grab any pan cover and place it over the sandwich while it cooks.
You aren’t gonna get the recipe for those squash rings for a bit so hold tight.

Cranberry and Kale Grilled Cheese
A spicy habanero-cranberry sauce adds the perfect tart element to this creamy grilled cheese. Kale, gruyere, and Munster help balance the sandwich.
Servings: 1 sandwich
Ingredients
cranberry habanero sauce
- 1 overflowing cup fresh cranberries
- 1 habanero minced and seeds removed
- 1/4 cup honey
- 1/4 cup water
- 1 pinch cinnamon
Sandwich
- bread
- kale
- munster
- gruyere
- mustard for dipping
Instructions
- Mix the cranberry sauce ingredients in a pot and bring to a simmer. Turn the heat down and gently simmer about a half hour until the cranberries have broken down and the sauce is thick.
- Build the sandwiches with a nice sturdy bread first, then lots of cheese. Spread on the cranberry, then kale. then top with more cheese before closing.
- Grill with butter until browned and cheese is melted.
Tart flavor with cheese? I get the kale addition but cranberry in a grilled cheese sandwich sounds a bit over the top. Plus, I like my regular grilled cheese sandwich with tomato soup.
