Buffalo Chicken Guacamole
Spicy chicken is a perfect contrast to creamy guac in this buffalo chicken guacamole recipe! It might seem weird or even blasphemous to mix guacamole with buffalo chicken, but for me, the idea just worked. Just think about grabbing a chip and dipping deep into the creamy guac. Tart and spicy chicken is just the right flavor to go with that garlicky goodness! I made the guac a little different to really pair well with the chicken – adding buffalo chicken best friends like celery, carrot, and even blue cheese to the mix!
Where did this idea come from?
Everyone seems to love buffalo chicken dip, and sure, it’s VERY good, but it’s just so much! Heavy, and so cheesy – a few bites and you might not even want to eat dinner. On top of that, most recipes are made with canned chicken. Why? It’s weird to me.
I set out to make buffalo chicken guacamole as an incredible app that you could eat a lot of but still be ready for the main course or several more snacks if you are making this for a game day party.
Start by mixing up the guacamole
This is not a typical guac! You could use your favorite guac recipe, but I made some tweaks to make sure it would perfectly merge with the chicken.
Guac ingredients
- avocados
- garlic
- lime juice
- salt
- carrot
- celery
- parsley
- blue cheese
Sure, you might think it is weird to put celery, carrots, and blue cheese into guac, but they are all best friends with buffalo chicken so it makes sense for this buffalo chicken guacamole!!
Preparing the chicken
I like to freeze the chicken the night before so I can cut it into perfect little squares. I cut it after it thaws for about an hour.
Then cook the chicken on high heat to brown around the edges. Lower the heat and add butter, hot sauce, and a few more ingredients for the perfect spicy and tart buffalo sauce! The little cubes are great for a buffalo chicken guacamole dip because they are all bite sized and can fit on a chip.
Serving the Buffalo Chicken Guacamole
Add the guac to a bowl, then make a nice little indentation for the chicken. Kinda reminds me of when you eat mashed potatoes and make a little spot for the gravy!
Then load the buffalo chicken onto the guacamole! Make sure to add all the saucy goodness.
Finally top it with more blue cheese. So good! tasting is believing with this buffalo chicken guacamole. The flavors all go so well together – it’s hard for me to stop eating!

Twists on buffalo chicken guacamole
If you wanted to make this quick, you could definitely use store bought guacamole. You could even use store bought buffalo chicken!
I know there are a lot of people out there who are team RANCH and I respect that. To do a ranch version, I would add a ot of fresh herbs and a little mayo to the guac itself- like dill, parsley, and chives. Then top the whole thing with a little squeeze of ranch dressing.

Buffalo Chicken Guacamole
Ingredients
Guac
- 3 ripe avocados
- 2 cloves garlic grated
- 1 lime (juice)
- 1/2 teaspoon salt
- 1/4 cup minced carrot
- 1/4 cup minced celery
- 1/4 cup chopped parsley
- 1/2 cup crumbled blue cheese split in half
Chicken
- 1 tablespoon peanut oil
- 1 large chicken breast cut into 1/2 inch cubes
- 2 tablespoons butter
- 1/4 cup cayenne hot sauce
- 1 tablespoon bbq sauce
- 1 tablespoon honey
Serving
- chips
Instructions
- Mix all the guacamole ingredients in a large bowl. Only use half the blue cheese. Mash to combine, but don't over-mash so there is still some texture from the avocados and blue cheese
- Preheat a large nonstick pan with the peanut oil. Add in the chicken and cook a few minutes to sear on all sides. Turn heat to low and add in the butter, cayenne sauce, bbq sauce, and honey. Stir to combine and lightly simmer for 5 minutes until the sauce thickens up and clings to the chicken.
- Spread the guac in a bowl making a large indentation in the top of the guac.
- Pour the chicken and juices into the indentation of the guac
- Top with the remaining blue cheese. Serve with chips.
