Buffalo Chicken Guacamole
A twist on guacamole that is loaded with carrot, celery, and blue cheese and topped with spicy chunks of buffalo chicken

Guac
- 3 ripe avocados
- 2 cloves garlic grated
- 1 lime (juice)
- 1/2 teaspoon salt
- 1/4 cup minced carrot
- 1/4 cup minced celery
- 1/4 cup chopped parsley
- 1/2 cup crumbled blue cheese split in half
Chicken
- 1 tablespoon peanut oil
- 1 large chicken breast cut into 1/2 inch cubes
- 2 tablespoons butter
- 1/4 cup cayenne hot sauce
- 1 tablespoon bbq sauce
- 1 tablespoon honey
Mix all the guacamole ingredients in a large bowl. Only use half the blue cheese. Mash to combine, but don't over-mash so there is still some texture from the avocados and blue cheese
Preheat a large nonstick pan with the peanut oil. Add in the chicken and cook a few minutes to sear on all sides. Turn heat to low and add in the butter, cayenne sauce, bbq sauce, and honey. Stir to combine and lightly simmer for 5 minutes until the sauce thickens up and clings to the chicken.
Spread the guac in a bowl making a large indentation in the top of the guac.
Pour the chicken and juices into the indentation of the guac
Top with the remaining blue cheese. Serve with chips.
