Buffalo Chicken Guacamole

A twist on guacamole that is loaded with carrot, celery, and blue cheese and topped with spicy chunks of buffalo chicken

Ingredients

Guac

  • 3 ripe avocados
  • 2 cloves garlic grated
  • 1 lime (juice)
  • 1/2 teaspoon salt
  • 1/4 cup minced carrot
  • 1/4 cup minced celery
  • 1/4 cup chopped parsley
  • 1/2 cup crumbled blue cheese split in half

Chicken

  • 1 tablespoon peanut oil
  • 1 large chicken breast cut into 1/2 inch cubes
  • 2 tablespoons butter
  • 1/4 cup cayenne hot sauce
  • 1 tablespoon bbq sauce
  • 1 tablespoon honey

Instructions

  • Mix all the guacamole ingredients in a large bowl. Only use half the blue cheese. Mash to combine, but don't over-mash so there is still some texture from the avocados and blue cheese
  • Preheat a large nonstick pan with the peanut oil. Add in the chicken and cook a few minutes to sear on all sides. Turn heat to low and add in the butter, cayenne sauce, bbq sauce, and honey. Stir to combine and lightly simmer for 5 minutes until the sauce thickens up and clings to the chicken.
  • Spread the guac in a bowl making a large indentation in the top of the guac.
  • Pour the chicken and juices into the indentation of the guac
  • Top with the remaining blue cheese. Serve with chips.
