Sweet Potato Kale Ravioli

I made these ravioli wayyy back in January for a planned dinner party. Then it snowed and we postponed for a week later, so I popped them into the freezer. Then it snowed for like 2 months straight and everyone abandoned all plans for leaving their house ever. This weekend I remembered I had them in the freezer and realized it would be a super easy and quick dinner for me. I looked around the fridge for a light sauce to combine them with and saw some butter, cream, garlic, and blue cheese and knew it would be a perfect match.


The filling starts with a couple roasted sweet potatoes, a bunch of roasted kale, and a few cooked sausages.
Some parm and truffle oil finish it off. Then make your ravioli.
I like nice simple square ones.


Butter, garlic, cream…


…and some blue cheese.


Boil the ravioli for a few minutes, and then toss them in the sauce.


Wow, there was kind of a lot going on in these, but they were pretty amazing.


That creamy sweet potato goes so well with that charred bitter kale flavor. A little bit of salty sausage goes a long way, and the hint of truffle oil brings it to the next level.


I never intended a blue cheese sauce, I thought that a simple cream or butter sauce would be enough, but the blue cheese was actually a great contrast to the sweet potato.

 

Sweet Potato Sausage Kale Ravioli

These ravioli are creamy, sweet, and salty, and have a nice sharpness from the blue cheese.

Ingredients

  • 3 Sweet Potatoes
  • 1 Bunch Kale
  • 2 Italian Sausages
  • 1/2 Cup Grated Parm
  • 2 Tablespoons Truffle Oil more or less to taste
  • Salt and Pepper
  • 2 Batches Fresh Pasta recipe linked above
  • 2 Tablespoons Butter
  • 1 Clove Garlic crushed
  • 1/4 Cup Cream
  • 1/4 Cup Blue Cheese

Instructions

  • This ravioli recipe makes a lot because I was making enough for 8 people. Meanwhile, the sauce amounts listed are for a single serving of only 10 ravioli, because as I said above, I ended up just making some for myself for dinner. Take this into account if you are planning on making this and adjust the recipes as needed.
  • For the ravioli – Roast the sweet potatoes until tender. Roast the kale until lightly browned and break it up. Take the sausages out of the casing and cook to brown. Grate the parm, make the pasta and let it rest for a half hour. Mix all the filling ingredients and adjust flavorings and salt as needed.
  • Roll out the dough and make your ravoili.
  • Meanwhile, make the sauce by melting the butter in a pan and then adding the crushed garlic. Simmer for 1 minute and add the cream. Turn to low and add the cheese. Let the cheese melt into the cream. Boil your ravioli and then toss it right into the sauce. Toss to coat and serve.
