Spicy Herb and Cabbage Calzone
This was one of those times where you open your fridge and try and put together a meal with lots of ingredients leftover from other recipes. I had tons of different herbs, half a cabbage, some sharp cheese, olives, and pizza dough. Normally when I make a clean-out-the-fridge meal, I don’t take pictures, but this ‘zone came out fantastic, and much different than any calzone I have ever had, so I decided you guys might be interested. It was almost more of an intensely flavored empanada filling in a pizza crust.
Then chop up all of your herbs, chiles, and olives.
A nice pile of fresh herbs.
Mix the herbs into the cabbage and add some cheese.
Roll your pizza dough out thin.
Bake at 500 for about 7-10 minutes.
So tasty and flavorful! Sharp from the olives and cheese, and fresh tasting from all the herbs.
I ate these for dinner but they would make a great app or finger food for a party.
Spicy Herb and Cabbage Calzone
Ingredients
- 1/2 Head Cabbage
- 1/4 Cup Chopped Mint
- 1/4 Cup Chopped Basil
- 1/4 Cup Chopped Parsley
- 1/4 Cup Chopped Scallion
- 3 Red Chiles
- 10 Olives
- 1/2 Cup Sharp Aged Cheese see below
Instructions
- Chopped mint, basil, parsley, and scallion equal to about 1 cup total. half a cabbage, chopped and caramelized until very browned. 3 red chiles and 10 olives, finely chopped. About a half cup of a sharp hard cheese. I used Sartori BellaVitano, because I recently had some sent to me, and I really think it made these calzones amazing, but for a substitute, you could try pecorino romano, or grana padano. Mix it all together and pop it into some thinly rolled pizza dough. Bake at 500 until browned.
This is such a great idea! Anything in calzone form gets my vote, really, but especially cabbage. It’s almost a giant handheld pierogie!
