S’mores Burgers
At a recent grilling party with some friends, someone had taken the liberty to break into the s’mores a little prematurely. Watching the marshmallow perfectly brown I happened to be standing in just the right spot that the marshmallow was directly in front of a burger on the grill in my eyeline. I laughed to myself thinking that the gooey browned marshmallow looked like cheese on the burger. I then stopped laughing and took out my phone for a quick note-to-self. MAKE S’MORES BURGERS IMMEDIATELY it read. And why not? Marshmallow, chocolate, and graham are one of the best flavor combinations in the world, and it’s no secret that chocolate and burnt sugar go great with a bit of salt. I showed up at my friends place this weekend with the ingredients and about 5 options for how we might do this. We narrowed it down to the 2 best ideas and got to work!
S’mores Slider Stack
I wanted to make at least one of these burgers with graham cracker as the bun and I knew if I did it would have to be a slider sized burger. Still though, we thought the crackers would get soggy so we came up with the idea of making marshmallow sandwiches to make the “bun” a little heartier. Then the chocolate is, of course, inside the burger itself. These sliders came out tasty, but we all agreed that they came out S’more-heavy with a hint of burger, as opposed to a clean and balanced melding of s’mores and burgers
Wrap up the chocolate in about 1/8th pound of meat for the slider.
Nice square patties with a suprise inside.
We just skewered a bunch of marshmallows to toast them for this burger.
Form your marshmallow sandwiches, then use them as the bun for this slider.
These look like monsters but they are pretty small and manageable in only 3 or so bites (perfect slider size.)
As I mentioned though, while very good, the s’mores flavor overpowered the burger flavor and we wished they were more balanced.
Also they were way too messy to get the cross section photo of molten chocolate ooze.
The S’moresburger
This is the true melding of s’mores and burger we were looking for. A regular backyard-sized patty stuffed with a molten chocolate center that comes oozing out when you take a bite. 3 marshmallows melted on top like cheese with just enough char for that campfire marshmallow flavor. 2 simple graham crackers go above and below the burger to complete the s’mores trifecta of flavor. This thing is special.
Disclaimer: I tell you in the instructions to toast the marshmallows and then put them onto the burger, but as you can see these are un-toasted. We had a blowtorch so we went took some liberties.
The graham might seem like it is so small that it totally gets lost in this burger, but that isn’t true at all, it makes a big difference.
Gooey marshmallow madness.

Ingredients
smores slider stacks
- 1/8 Pound ground beef 85% lean
- 1/2 Ounce chocolate bittersweet 60% dark
- marshmallows
- graham crackers
smoresburger
- 1/3 Pound ground beef 85% lean
- 1 Ounce chocolate bittersweet 60% dark
- 3 marshmallows
- graham crackers
- burger bun
Instructions
For the slider stacks
- Wrap the beef in a thin layer around the square of chocolate. Keep the patty square to match the graham cracker. Salt well.
- Toast the marshmallows to brown. Use the crackers to make sandwiches with the marshmallows (Like a s'more but without the chocolate).
- Grill up the burgers until you start to see chocolate wanting to come oozeing out but get it off the grill before it actually comes out too much! Use the marshmallow sandwiches as buns for your burgers.
for the smoresburger
- Break the chocolate squares so they can lay in a single layer in the center of the burger. Wrap the burger meat around the chocolate. Salt well.
- Grill the burger on the first side and toast the marshmallows while it is grilling. Flip the burger and put the toasted marshmallows onto the top of the burger, pressing them down a little.
- Close the grill to allow the marshmallows to melt a little to coat the top of the burger.
- Meanwhile, lightly toast the buns. Put half of the graham cracker onto the bottom bun, then top with the burger, add the other half of the cracker, and top with the top bun. Watch out for molten chocolate when biting into this thing!
That is certainly unique! Can’t say I ever looked at s’mores and thought of merging them with burgers. But now I’m intrigued. I will have to make this at some point, just to say I’ve done it. 🙂
I had a dream last night in which I had come across a food stand selling s’mores burgers. I bought one and then I woke up before I had a chance to eat the dream burger. Thankfully the idea didn’t vanish immediately like most of my dreams do. I Googled smores hamburger and was happy to find they are a real thing. I know what I’m having for dinner tonight.
How did I come out? I dream of burgers too.
I think maybe a mole sauce would work better flavor wise rather than the Hershey… It would also give a little of that red ancho flavor which is always a bonus.
I’m not gonna lie. I am pregnant and craving toasted marshmallows on a burger. Wanted to ensure I wasn’t alone. I’m going to try this – minus the chocolate.
