Scallop Ceviche Tacos
Last week I went to see Cayucas with some friends, and before we headed out to the show, I made this tasty ceviche as a light pre-concert meal. It was inspired by their song “Deep Sea Diver”, and it was summery, fresh, and reminiscent of the ocean, just like the band’s music!
I got some super fresh scallops from the fish market since I wouldn’t be cooking them.
Quartered and tossed in lime.
Cucumber and mint make this super fresh tasting.
I think im falling in LOOOO-Oo-Oo-OovEEEE.

Scallop Ceviche Tacos
Ingredients
- 1 Pound Fresh Scallops cleaned, beard removed, and quartered
- 1/2 Cucumber
- 2 Teaspoons Chopped Mint
- 1 Clove Garlic
- 1/2 Red Onion
- 5 Limes juice
- 1/2 Teaspoon Salt
- 1 Cup Grated Carrot
- 2 Cups Shaved Red Cabbage
- 1/2 Red Onion thinly sliced
- 1 Tablespoon Agave
- 1 Teaspoon Sriracha
- 1 Tablespoon Fish Sauce
- 1 Lime juice
- 1 Teaspoon Chile Flake
Instructions
- Mix all the ceviche ingredients with about 1/2 teaspoon of salt. Allow to marinate in the fridge for about 45 minutes.
- Mix all the slaw ingredients and allow to sit for a half hour at least before serving
