Sausage Egg and Cheese Jamaican Patties
A morning twist on the iconic Jamaican beef patty with breakfast sausage, cheddar cheese, and an egg. But the sausage isn’t just pork and sage like a typical breakfast sausage. I used beef instead, and added a lot of the flavorings you would typically find in a Jamaican beef patty. That way it retained a lot of what makes a beef patty so good!
The inspiration for sausage egg and cheese Jamaican Patties
For some reason the other day I was thinking about Jamaican patties and realized I have never really had a fun twist on one. The most variation I have personally had was spicy, regular, or chicken. I wonder if I went to Jamacia, would there be more variation? I still haven’t been! The first thing that came to mind was breakfast. Wouldn’t it be so good to have one of these as a grab and go option at a coffee shop?
Make the breakfast sausage first
It is sort of a hybrid of breakfast sausage and Jamaican beef patty ingredients. Some sage, curry powder, allspice, garlic, ginger, and soy sauce among other things.

Next make the pastry for Jamaican beef patties
Start by grating frozen butter. This helps the pastry stay flakey.

Add the butter to the flour and spices, then stir in ice cold water.

Form the dough, then wrap and store it in the fridge for an hour.

Make the breakfast Jamaican patty filling
Start with onion and then add in the sausage you made earlier. Then add scotch bonnet and scallions and keep cooking. Finally stir in stock and breadcrumbs.

Form the sausage egg and cheese Jamaican Patties
Roll out the pastry dough and cut it into 4 pieces.

Add the cheese, then the meat and an egg. More cheese, then wrap it up!

Use a fork to seal it, then cut off the edges. Make some vent holes as well.

Serve the sausage egg and cheese Jamaican patty
You want to eat this asap! It’s so good fresh from the oven with some hot sauce. Make sure you take them out asap when ready because the egg will be right on the verge of getting overcooked.

I used this recipe as a guide to help make the pastry and the patty flavor profile, and I used this one as a guide for the breakfast sausage flavors. This would also be good with bacon though!

Sausage Egg and Cheese Jamaican Patties
Ingredients
pastry
- 3 1/2 cups flour
- 2 teaspoons salt
- 1 tablespoon sugar
- 1 teaspoon curry powder
- 1 tablespoon turmeric
- 2 sticks butter frozen
- 1 cup ice water
Beef "sausage"
- 1 pound ground beef
- 1 teaspoon ground dried sage
- 1 teaspoon dried thyme
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon black pepper
- 3/4 teaspoon salt
- 1 tablespoon garlic paste
- 1 teaspoon ginger paste
- 1 teaspoon allspice
- 1/2 teaspoon curry powder
Beef filling
- 2 tablespoons butter
- 1 small yellow onion minced
- 1 scotch bonnet pepper minced, seeds removed if needed
- 4 scallions chopped
- 1/2 cup chicken broth
- 1/2 cup breadcrumbs
Build it
- 8 slices cheddar or colbyjack
- 4 eggs
Instructions
- For the dough- Mix the dry ingredients including the spices in a large bowl. Use a box cheese grater to grate the frozen sticks of butter. Add the grated butter to the flour and stir. Stir in the water and bring it together as a dough. Wrap it in plastic and store in the fridge for at least an hour or until ready to use.
- For the breakfast sausage, mix all the ingredients in a large bowl and stir until it is combined. Store in the fridge for at least an hour or until ready to use.
- Add the butter to a frying pan on medium and add in the homemade sausage mixture. Break it up and cook over medium heat for about 5 minutes stirring often. Add in the scotch bonnet and scallions and cook another 5 to 10. until the meat is fully cooked and really well crumbled.
- Stir in the stock and breadcrumbs and cook for 2 minutes. Mixture should be fairly wet but not too wet that it will break the pastry. Allow to cool for 10 minutes before building the patties.
- Preheat oven to 400
- Roll out the patty dough into a large rectangle and cut it into 4 equal pieces.
- Add a slice of cheese, then some of the beef. Make a well in the middle of the beef and crack an egg inside. Add another slice of cheese, then fold the dough over itself to make the patty.
- Use a fork to seal around the edges, and place on a parchment lined baking sheet.
- Bake at 400 for about 22-25 minutes until cooked.
- Serve immediately
