For the dough- Mix the dry ingredients including the spices in a large bowl. Use a box cheese grater to grate the frozen sticks of butter. Add the grated butter to the flour and stir. Stir in the water and bring it together as a dough. Wrap it in plastic and store in the fridge for at least an hour or until ready to use.
For the breakfast sausage, mix all the ingredients in a large bowl and stir until it is combined. Store in the fridge for at least an hour or until ready to use.
Add the butter to a frying pan on medium and add in the homemade sausage mixture. Break it up and cook over medium heat for about 5 minutes stirring often. Add in the scotch bonnet and scallions and cook another 5 to 10. until the meat is fully cooked and really well crumbled.
Stir in the stock and breadcrumbs and cook for 2 minutes. Mixture should be fairly wet but not too wet that it will break the pastry. Allow to cool for 10 minutes before building the patties.
Preheat oven to 400
Roll out the patty dough into a large rectangle and cut it into 4 equal pieces.
Add a slice of cheese, then some of the beef. Make a well in the middle of the beef and crack an egg inside. Add another slice of cheese, then fold the dough over itself to make the patty.
Use a fork to seal around the edges, and place on a parchment lined baking sheet.
Bake at 400 for about 22-25 minutes until cooked.
