Sausage Egg and Cheese Jamaican Patties

Ingredients

pastry

  • 3 1/2 cups flour
  • 2 teaspoons salt
  • 1 tablespoon sugar
  • 1 teaspoon curry powder
  • 1 tablespoon turmeric
  • 2 sticks butter frozen
  • 1 cup ice water

Beef "sausage"

  • 1 pound ground beef
  • 1 teaspoon ground dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 3/4 teaspoon salt
  • 1 tablespoon garlic paste
  • 1 teaspoon ginger paste
  • 1 teaspoon allspice
  • 1/2 teaspoon curry powder

Beef filling

  • 2 tablespoons butter
  • 1 small yellow onion minced
  • 1 scotch bonnet pepper minced, seeds removed if needed
  • 4 scallions chopped
  • 1/2 cup chicken broth
  • 1/2 cup breadcrumbs

Build it

  • 8 slices cheddar or colbyjack
  • 4 eggs

Instructions

  • For the dough- Mix the dry ingredients including the spices in a large bowl. Use a box cheese grater to grate the frozen sticks of butter. Add the grated butter to the flour and stir. Stir in the water and bring it together as a dough. Wrap it in plastic and store in the fridge for at least an hour or until ready to use.
  • For the breakfast sausage, mix all the ingredients in a large bowl and stir until it is combined. Store in the fridge for at least an hour or until ready to use.
  • Add the butter to a frying pan on medium and add in the homemade sausage mixture. Break it up and cook over medium heat for about 5 minutes stirring often. Add in the scotch bonnet and scallions and cook another 5 to 10. until the meat is fully cooked and really well crumbled.
  • Stir in the stock and breadcrumbs and cook for 2 minutes. Mixture should be fairly wet but not too wet that it will break the pastry. Allow to cool for 10 minutes before building the patties.
  • Preheat oven to 400
  • Roll out the patty dough into a large rectangle and cut it into 4 equal pieces.
  • Add a slice of cheese, then some of the beef. Make a well in the middle of the beef and crack an egg inside. Add another slice of cheese, then fold the dough over itself to make the patty.
  • Use a fork to seal around the edges, and place on a parchment lined baking sheet.
  • Bake at 400 for about 22-25 minutes until cooked.
  • Serve immediately
