Lasagna Grilled Cheese

Ever since I made taco shells out of lasagna I have wondered what else I could use the pasta strips in place of. I recently had the opportunity to play around in the kitchen and came up with these fun mini lasagna grilled cheeses. I used ricotta with some spinach and egg in it to help it not just run right out of the center of the "grilled cheese" There was also mozzarella and pepperoni, but I kept the sauce on the side as a dip. I was worried about them falling apart but they ended up being a great little appetizer!
After cooking the pasta, double it up for each "bread" Mozz first, then pepperoni, then the ricotta, egg, spinach mixture, then another slice of mozz before adding the top "bread" Griddle them in a pan for about 5 minutes a side. Gotta get the pic. These came out perfect and they really held together well. The flavors were awesome together! Don't forget the sauce, it's just a simple marinara The other worry was the pasta would be too crunchy and cause the filling to squeeze out but that thankfully wasn't an issue either.

Lasagna Grilled Cheese

  • 2 cups Chopped Spinach
  • 1 cup Ricotta
  • 1 Egg
  • about 10 Lasagna Noodles cooked
  • 8 slices Pepperoni
  • 4 slices Mozzarella cut into 4 quarters
  • marinara for dipping

Instructions

  1. Cut the noodles into squares and stack them in stacks of 2, with the ruffles on different edges. You want 16 stacks to make 8 sandwiches.
  2. Saute the spinach with a little oil until it is wilted and dry, about 5 minutes.
  3. Mix the spinach with the ricotta and stir in the egg. Mix well.
  4. Build the sandwiches with the noodles first, then a mozzarella quarter, then the pepperoni, then about 2 tablespoons of the ricotta mixture, another slice of mozzarella, and the top noodles.
  5. Griddle on a hot pan with some olive oil for about 5 minutes a side to lightly brown, melt the cheese, and cook the egg in the ricotta mixture.
  6. Allow to cool for a minute before cutting and serving. Cutting is the hardest part with these because they may squish. The way I did it was start with some scissors and then use the knife after.
  7. Serve with the marinara sauce.
