Lasagna Grilled Cheese

A mini grilled cheese sandwich with lasagna noodles instead of bread! Cut into triangles of course! These crispy little pasta snacks are loaded with flavor. When I came up with this idea at first, I thought it would be a gimmick, but it actually was fairly straightforward to make and came out delicious!

The inspiration for this recipe

Ever since I made taco shells out of lasagna I have wondered what else I could use the pasta strips in place of. I recently had the opportunity to play around in the kitchen and came up with these fun mini lasagna grilled cheeses. I used ricotta with some spinach and egg in it to help it not just run right out of the center of the “grilled cheese” There was also mozzarella and pepperoni, but I kept the sauce on the side as a dip. I was worried about them falling apart but they ended up being a great little appetizer!

After cooking the pasta, double it up for each “bread”. It will stick together. Then add the fillings.

And here is that photo! Griddle them in a pan for about 5 minutes a side with plenty of oil or butter. Be gentle at first as the filling firms up.

These came out perfect and they really held together well. The flavors were awesome together! Cut them all in half the long way and then put them on a plate. Don’t forget the sauce, it’s just a simple marinara.

My main concern was the pasta would be too crunchy and cause the filling to squeeze out but that thankfully wasn’t an issue at all.

Twists on this dish

You could put any fillings you want in between these pasta sheets for a fun little appetizer. Just don’t overstuff it and make sure the fillings won’t be too wet and cause the sandwich to fall apart.

Ingredients

  • 2 cups chopped spinach
  • 1 cup ricotta
  • 1 egg
  • about 10 lasagna noodles cooked
  • 8 slices pepperoni
  • 4 slices mozzarella cut into 4 quarters
  • marinara for dipping

Instructions

  • Cut the noodles into squares and stack them in stacks of 2, with the ruffles on different edges. You want 16 stacks to make 8 sandwiches.
  • Saute the spinach with a little oil until it is wilted and dry, about 5 minutes.
  • Mix the spinach with the ricotta and stir in the egg. Mix well.
  • Build the sandwiches with the noodles first, then a mozzarella quarter, then the pepperoni, then about 2 tablespoons of the ricotta mixture, another slice of mozzarella, and the top noodles.
  • Griddle on a hot pan with some olive oil for about 5 minutes a side to lightly brown, melt the cheese, and cook the egg in the ricotta mixture.
  • Allow to cool for a minute before cutting and serving. Cutting is the hardest part with these because they may squish. The way I did it was start with some scissors and then use the knife after.
  • Serve with the marinara sauce.

  1. You may want to add chopped broccoli along with chopped spinach to add that healthy aura to it. I did it and it tastes amazing!

    1. Yea, air frying would probably work just fine! Not sure if it makes sense since putting them in a pan is so easy.
