Lasagna Grilled Cheese
A mini grilled cheese sandwich made on cooked lasagna noodles. Inside there is pepperoni, ricotta, mozzarella, and spinach. Serve with marinara for dipping.

- 2 cups chopped spinach
- 1 cup ricotta
- 1 egg
- about 10 lasagna noodles cooked
- 8 slices pepperoni
- 4 slices mozzarella cut into 4 quarters
- marinara for dipping
Cut the noodles into squares and stack them in stacks of 2, with the ruffles on different edges. You want 16 stacks to make 8 sandwiches.
Saute the spinach with a little oil until it is wilted and dry, about 5 minutes.
Mix the spinach with the ricotta and stir in the egg. Mix well.
Build the sandwiches with the noodles first, then a mozzarella quarter, then the pepperoni, then about 2 tablespoons of the ricotta mixture, another slice of mozzarella, and the top noodles.
Griddle on a hot pan with some olive oil for about 5 minutes a side to lightly brown, melt the cheese, and cook the egg in the ricotta mixture.
Allow to cool for a minute before cutting and serving. Cutting is the hardest part with these because they may squish. The way I did it was start with some scissors and then use the knife after.
Serve with the marinara sauce.
