Queso Fundido Stuffed Burger
A big juicy burger, so big that you can tell it must be stuffed with something, and when you take a bite, queso fundido comes oozing out!!! You all know I love a food with a surprise inside! And what is a better surprise than hot cheese and spicy chorizo? And because queso fundido comes with chips on the side, I decided to pop them right on top of the burger!
The inspiration for this recipe
Queso Fundido is about as cravable as you can get, especially when there is chorizo mixed in with the cheese. It’s like hidden little bombs of flavor just waiting to explode when you take a bite. I decided to stuff queso fundido into a burger and top it with the chips you would use to eat it with! I have never been the biggest fan to juicy lucy style burgers, but this one made a lot of sense to me and really worked perfectly!
Start by forming the cheese
Grab the bun you will be using, and then cut rounds of cheese a little smaller than the diameter of the bun. Traditionally this would be made with chihuahua cheese. If you can find it in a block form, definitely use it, but if not, mozzarella will work almost just as good.

Form the queso fundido stuffed burger
Start by flattening the beef on a piece of parchment, then add a cheese round. Next add chorizo and jalapenos, and top with another cheese round. Then wrap the ground beef around the cheeses.

Cook the queso fundido stuffed burger
Cook this on medium heat so that the queso fundido stuffing gets hot at the same time as the burger edges get browned. I also like to cover it to help it warm up throughout. If you see any cheese escaping from the center of the burger, it’s time to pull them from the heat!

Build and serve the queso fundido stuffed burger
Toasted bun, then some avocado. Next, add the burger, then chips, then jalapenos and pico.

But it’s nothing compared to all the queso fundido goodness stuffed on the inside of the burger!

Twists on this recipe
You could add cheese to the chips on top of this. Maybe even nacho cheese sauce if you want to get crazy. You could also swap the pico and jalapeno for a more classic lettuce, tomato, and pickle if you prefer.
I mentioned that I don’t love juicy lucy style burgers, but I have done them a handful of times. My most famous version is this mac and cheese stuffed burger. I also have an egg stuffed burger.

Queso Fundido Stuffed Burger
Ingredients
- 8 ounce block of chihuahua or mozzarella cheese
- 3/4 pound ground beef
- 1/4 pound crumbled and cooked mexican chorizo
- 2 tablespoons minced jalapeno and fresno peppers
- 1 avocado
- 1 lime
- 2 slices colby jack cheese or your favorite burger cheese slices
- 6 tortilla chips
- 1/2 cup pico de gallo
- 6 slices pickled jalapeno
- 2 large burger buns
Instructions
- Cut the block of cheese into two rounds. Use the buns to judge, making them about a half inch smaller in diameter than the buns. Next, cut each of your cheese rounds in half the long way so they are thinner. Discard the extra cheese (shred it and save for next time you want a quick nacho)
- Break the beef into 2 equal pieces. Flatten the beef and place 1 piece of cheese down, then add about two tablespoons of the cooked chorizo. Next add about a tablespoon of the minced hot peppers. Top with the next piece of cheese. Press down to flatten and remove some air from the middle.
- Wrap the beef all around the cheese and make sure to seal it up around all the edges. Season the outside of the burgers with salt and pepper.
- Mash the avocado and mix in the lime juice. Season with salt.
- Grill the burgers on medium heat to brown and cook through. Cover them if you can to help the heat go through the center of the burger. After flipping, top each burger with a slice of the colby jack and cover to finish cooking. If you ever see cheese leaking out of the center of the burger, you know it is done.
- Toast the buns. Spread some avocado on both top and bottom buns.
- Put the burger on a bun and top with the tortilla chips. Add the pico and jalapenos, then the top bun, and serve.


Im having a hard time finding all the extra flavors of old croc cheese in my area…any suggestions? we have been looking since the carnita burrito recipe you posted.. really the only reason we havent made it yet….
