Cut the block of cheese into two rounds. Use the buns to judge, making them about a half inch smaller in diameter than the buns. Next, cut each of your cheese rounds in half the long way so they are thinner. Discard the extra cheese (shred it and save for next time you want a quick nacho)
Break the beef into 2 equal pieces. Flatten the beef and place 1 piece of cheese down, then add about two tablespoons of the cooked chorizo. Next add about a tablespoon of the minced hot peppers. Top with the next piece of cheese. Press down to flatten and remove some air from the middle.
Wrap the beef all around the cheese and make sure to seal it up around all the edges. Season the outside of the burgers with salt and pepper.
Mash the avocado and mix in the lime juice. Season with salt.
Grill the burgers on medium heat to brown and cook through. Cover them if you can to help the heat go through the center of the burger. After flipping, top each burger with a slice of the colby jack and cover to finish cooking. If you ever see cheese leaking out of the center of the burger, you know it is done.
Toast the buns. Spread some avocado on both top and bottom buns.
Put the burger on a bun and top with the tortilla chips. Add the pico and jalapenos, then the top bun, and serve.
