Meatloaf Burrito

An individual sized meatloaf, wrapped up inside a big burrito! These are brushed with a typical meatloaf glaze, and smothered in cheese. When you cut into the burrito, it’s packed wall to wall with juicy delicious meatloaf! I added some Mexican spices like cumin, coriander, chili powder, and smoked paprika, but the best thing I added was pickled jalapeno! It gave these meatloaf burritos a nice level of heat but more importantly a tangy kick that balanced the heavy meatloaf flavors.

The idea behind this recipe

To be honest, I came up with this one while watching someone make a dumb and bad recipe on TikTok. I love TikTok don’t get me wrong, but some of the gimmicky recipes make me mad. I think they are bad on purpose to get views! But sometimes the bad ideas have a good idea baked inside of them. Kind of like this burrito has a meatloaf baked inside of it.

Make the meatloaf filling for the burritos

These are the ingredients I used in the meatloaf mixture.

  • beef
  • pork – you could also use turkey
  • panko breadcrumbs
  • onions
  • garlic
  • pickled jalapenos
  • parsley
  • jack cheese
  • chili powder
  • smoked paprika
  • cumin
  • coriander
  • dried oregano
  • 1 egg

Mix it all together! You need to use your hands for this to really get it all combined. Unless you want to use a stand mixer which I think it more trouble than it’s worth when it comes to cleaning it.

Make sure to warm up the tortillas first so they are pliable and don’t rip. I like to microwave them between two damp paper towels. After they are soft, put the meatloaf mixture in the center and roll it up.

Baking the meatloaf burritos

Put them in a greased pan and brush some oil all around them. bake for 10 minutes, then start glazing them and continue to bake and glaze until fully cooked.

  • worcestershire
  •  honey
  • red wine vinegar
  • hot sauce (I used valentina)

Once the middle hits about 145, add the cheese and cook a little more until the cheese is melted and the middle finishes cooking.

Serving the meatloaf burritos

Allow them to cool for about 5 minutes before serving. They look epic on the plate! A big burrito filled with meatloaf! The meatloaf mixture is super juicy because the breadcrumbs hold all the fat and the tortilla helps seal it in.

I loved the way the meatloaf tasted with the pickled jalapenos and so much parsley. The cumin and chili powder really went a long way to making this taste a little like traditional meatloaf but different enough to match flavors you would find in a burrito.

Twists on this recipe

You could make this with a classic meatloaf recipe in the middle. I always hope that people take inspiration from my recipes but make it their own! Use your family recipe for the middle if you want.

Meatloaf Burrito

Ingredients

Meatloaf mixture

  • 1 pound ground beef 85% lean
  • 3/4 pound ground pork or turkey
  • 3/4 cup panko breadcrumbs
  • 1 cup diced onions
  • 5 cloves garlic minced
  • 1/2 cup diced pickled jalapenos
  • 1 cup chopped parsley
  • 1 cup shredded jack cheese
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon coriander
  • 1 tablespoon dried oregano
  • 1 egg

The rest

  • 6 extra large tortillas
  • 1/2 cup ketchup
  • 2 tablespoons worcestershire
  • 1/4 cup honey
  • 1 teaspoon red wine vinegar
  • 2 tablespoons hot sauce (I used valentina)
  • 1 1/2 cups shredded jack cheese

Instructions

  • Mix all the meatloaf ingredients in a large bowl. Season with salt and pepper. Stir and mix with your hands until the mixture is fully combined.
  • Preheat oven to 400
  • Start with three of the tortillas. Place a damp paper towel on a plate, then add the tortillas and add another paper towel on top. Microwave for about 30 seconds.
  • Bring the plate to your work surface and put one tortilla down on a cutting board. Leave the other two on the warm plate inside the paper towels.
  • Place about 1/6th of the meat mixture onto the tortilla. Form it into a log, then roll up the burrito, starting by folding it over the meat, then folding the sides, and then rolling it the rest of the way. See photos above for help if needed.
  • Place the burrito into a greased baking dish, and spray or brush the whole thing with oil. Repeat with the next two warm tortillas, then repeat the whole process with the remaining three tortillas, warming them up first in the microwave.
  • Bake for 10 minutes, and while they bake, mix the ketchup, worcestershire, hot sauce, vinegar, and honey together in a bowl.
  • Remove the burritos from the oven and glaze with the sauce. Repeat every 5 or 10 minutes.
  • When the burritos reach an internal temperature of 145 – about 30 minutes – add the last glaze and top with cheese. Cook another 5 to 10 minutes until the cheese is melted all around the burritos.
  • Allow to cool for 5 minutes before serving.
