Mix all the meatloaf ingredients in a large bowl. Season with salt and pepper. Stir and mix with your hands until the mixture is fully combined.
Preheat oven to 400
Start with three of the tortillas. Place a damp paper towel on a plate, then add the tortillas and add another paper towel on top. Microwave for about 30 seconds.
Bring the plate to your work surface and put one tortilla down on a cutting board. Leave the other two on the warm plate inside the paper towels.
Place about 1/6th of the meat mixture onto the tortilla. Form it into a log, then roll up the burrito, starting by folding it over the meat, then folding the sides, and then rolling it the rest of the way. See photos above for help if needed.
Place the burrito into a greased baking dish, and spray or brush the whole thing with oil. Repeat with the next two warm tortillas, then repeat the whole process with the remaining three tortillas, warming them up first in the microwave.
Bake for 10 minutes, and while they bake, mix the ketchup, worcestershire, chipotle, vinegar, and honey together in a bowl.
Remove the burritos from the oven and glaze with the sauce. Repeat every 5 or 10 minutes.
When the burritos reach an internal temperature of 145 - about 30 minutes - add the last glaze and top with cheese. Cook another 5 to 10 minutes until the cheese is melted all around the burritos.
Allow to cool for 5 minutes before serving.
