Spicy Maple Sausage Gravy Brunch Burger

A brunch burger with sausage gravy on it!? Sign me up! Sausage gravy is one of the best breakfast foods and using it on a burger is the kind of crazy but totally obvious idea that I love! This thing is like pure hangover antidote. Greasy, messy, and over the top delicious.

The inspiration for this recipe

I have been testing this spicy maple sausage gravy for a recipe in the tots cookbook, and I am pretty obsessed with it. I had some leftover so I made a brunch burger and totally smothered the thing with the gravy. It was a messy disaster to eat but I savored every single bite! So much that I ate two of them!

Make the sausage gravy first

First cook up the sausage and onion with some butter. Add in flour and cook for a few minutes just to cook the raw flour flavor out of it.

Add in some milk and whisk to combine. Bring to a boil and it will thicken up.

Add the maple and hot sauce to the gravy

I let this cool a little too long before adding the maple and sriracha and it got that skin on the surface. No problem for the recipe, just stir it up and it will be fine. It just made the picture look weird.

Cook the burger

Make your burger simply with just some loosely packed ground beef seasoned heavily with salt and pepper. Pop it in a frying pan to char on both sides, and add cheese of course.

Build the sausage gravy brunch burger

Pop the burger on top of a toasted english muffin. Then put an aggressive amount of sausage gravy on it.

Put a fried egg on it, and sandwich it with the top of the english muffin. Ohhhhhhh man – this is good! Egg yolk and so much gravy makes for a messy burger, but itโ€™s totally worth it.

The maple, sriracha, and sausage combine to form a really sweet, spicy, and savory gravy. Pairing it with the egg and english muffin make it perfect for brunch, but you could put this on any burger and it would be amazing. Or any food item for that matter. ย Or really just any object.

You could serve this on a biscuit! I think I might actually make that version soon. Maybe even with smash burgers! You could also serve it on a regular bun. You could even do a sausage patty instead of beef if you want it to be even more breakfasty.

I listed sriracha in this recipe but lately the sriracha is different so you can add whatever your favorite hot sauce is!

Maple sriracha sausage gravy is a magical sauce that takes this brunch burger to the next level.

Ingredients

  • 8 Ounces loose breakfast sausage
  • 1 small onion diced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 2 tablespoons sriracha or other hot sauce
  • 1/4 cup maple syrup
  • 2 tablespoons chopped parsley
  • 1 teaspoon cider vinegar
  • 1 pound ground beef
  • 4 eggs
  • 4 slices cheese
  • 4 english muffins

Instructions

  • Cook the sausage and onion in a frying pan with the butter to brown. About 15 minutes. You want the sausage to be very broken up and browned, and the onion to be pretty brown and small.
  • Add in the flour and stir to incorporate. Mix well to avoid any clumps. Cook about 3 minutes stirring often.
  • Add in the milk and whisk to prevent clumping. Bring to a simmer stirring often.
  • Remove from heat. Add in the hot sauce, maple, parsley, and vinegar. Stir to combine. Gently heat if needed before serving.
  • Form the patties and cook them to desired doneness with the cheese.
  • Meanwhile, also fry up the eggs and slice and toast the muffin.
  • Put the burger on the english muffin and totally smother with the gravy. Top with an egg and the top of the english muffin!

  1. Made this over the weekend. Incredible. The sweetness of the syrup really shines in the gravy, but you still get a spicy kick from the sriracha. Messy and tasty to eat!
