Spicy Maple Sausage Gravy Brunch Burger
Maple sriracha sausage gravy is a magical sauce that takes this brunch burger to the next level.

- 8 Ounces loose breakfast sausage
- 1 small onion diced
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup milk
- 2 tablespoons sriracha or other hot sauce
- 1/4 cup maple syrup
- 2 tablespoons chopped parsley
- 1 teaspoon cider vinegar
- 1 pound ground beef
- 4 eggs
- 4 slices cheese
- 4 english muffins
Cook the sausage and onion in a frying pan with the butter to brown. About 15 minutes. You want the sausage to be very broken up and browned, and the onion to be pretty brown and small.
Add in the flour and stir to incorporate. Mix well to avoid any clumps. Cook about 3 minutes stirring often.
Add in the milk and whisk to prevent clumping. Bring to a simmer stirring often.
Remove from heat. Add in the hot sauce, maple, parsley, and vinegar. Stir to combine. Gently heat if needed before serving.
Form the patties and cook them to desired doneness with the cheese.
Meanwhile, also fry up the eggs and slice and toast the muffin.
Put the burger on the english muffin and totally smother with the gravy. Top with an egg and the top of the english muffin!
