Hummus Basil Feta Corn
It’s a little early for corn season, but once the grill comes out it’s hard to resist throwing some juicy ears of corn on there. I wanted to get this recipe to you guys asap so you could have it in your back pocket all grill season long. It’s a great twist on the classic street corn idea but it uses hummus instead of mayo to get all the cheese and herbs to stick to the corn. This is good for several reasons. One, some of my friends hate mayo and were pleased to see street corn they could actually eat! Two, the corn can sit out at a picnic or bbq for much longer without worry of contamination. And three, hummus is super flavorful and ready to go without the need to mix anything into it.
First get the corn on the grill to char up a bit.
Next, put some hummus out for people to snack on.
When the corn comes off the grill, brush some hummus on to it. I like to use plain for this but you can use whichever flavor you like that goes with the toppings you plan to use.
I topped mine with ample feta and basil, but there are tons of possibilities. I think as long as you have a cheese and an herb you are in good shape.
It’s really fun to put this out at a party because it’s a stunner of a dish and as you come out with it people sort of gasp.
A really great snack to have out at the beginning of the party when people are arriving and there won’t be food for a really long time.
Hummus Basil Feta Corn
A twist on street corn that uses hummus instead of mayo as the glue to keep all that delicious feta and basil on top.
Servings: 10 small corn pieces
Ingredients
- 5 ears corn
- 1/2 Cup hummus
- 1/2 cup crumbled feta
- 1/2 cup chopped basil
Instructions
- Cut the corn into thirds.
- Grill the corn to blacken on all sides.
- Brush hummus onto the corn as it comes off the grill.
- Top with feta and basil. Serve.
