Easter Ice Cream with Mini Eggs and A Peep Swirl

Easter candy is my favorite so I thought it would be fun to put mini eggs and peeps into ice cream! I took my leftover candy (typically leftover candy is rare but I bought extra) and made ice cream with it and it came out amazing! The crunchy candy coated chocolate is perfect with the creamy ice cream. The peep swirl adds an awesome texture!
The idea for this recipe
I have been making a ton of ice cream latey. I had a job at a gelato company and I learned all the tricks to great frozen desserts. When I stopped working there, I stopped making ice cream as much cause I didn’t have a good ice cream machine. Finally I started using liquid nitrogen and became obsessed again! I was snacking on some easter candy and I realized how good it would taste in ice cream. I made it a few days later and it is one of the best ice creams I have ever made. The peep swirl adds such a fun and unique element. There is a nice chewy marshmallow texture when it is fully frozen. This ice cream is so festive and delicious!
Make the ice cream base
Milk and cream are warmed up, and milk powder, sugar, and xanthan gum are mixed in.

Freeze the ice cream
You can do this in your ice cream maker, but I used liquid nitrogen.

I feel like some sort of witch every time I make liquid nitrogen ice cream.

Prepare the mini eggs for the easter ice cream
I find something beautiful about broken eggs and broken candy eggs are no different. I used a potato masher to crush these and it worked really well.

mix the eggs into the soft ice cream, and then freeze it more.

Prepare the peeps
Microwave the peeps for 30 seconds until then get really big and are super soft.

Then just stir them into the ice cream. You want the ice cream to be fairly hard at this point but not fully solid. Stir the soft peep into the ice cream but make sure not to over-mix it until it disappears. Stir it in just enough to create a nice swirl.

Serve the easter ice cream with mini eggs and peep swirl
Put the easter ice cream with mini eggs into a serving dish and eat! I topped it with more peeps and mini eggs, but you donโt need it. The ice cream tastes great on itโs own!

Twists on easter ice cream with mini eggs
You could make this easter ice cream with store bought vanilla, just soften it a little and mix in the mini eggs and microwaved peeps, then refreeze it. You could also mix in creme eggs if you want but they aren’t my favorite.

Easter Ice Cream with Mini Eggs and A Peep Swirl

Ingredients
- 2 cups whole milk buy good milk!
- 2 cups heavy cream
- 1.25 cups nonfat milk powder
- 1 cup sugar
- 1/8 teaspoon xanthan gum
- 1 pinch salt
- 1 teaspoon vanilla
- 1 cup crushed cadbury mini eggs
- 7 peeps
Instructions
- Heat the milk and cream in a small sauce pot until steaming but not simmering. Whisk in the milk powder, sugar, salt, and xanthan gum. Remove from heat.
- Stir in vanilla and chill until completely cold, a few hours.
- Make in your ice cream maker according to the manufacturer's instructions.
- When mostly firm, like a soft serve texture, mix in the broken mini eggs.
- Allow to cool in the freezer to harden further for like an hour or so. You don't want it to be fully solid, it should still be stirrable. Microwave the peeps for about 30 seconds until they get big and soft. Stir the peeps into the ice cream just enough to create a swirl.
- Cool in the freezer another hour before serving.
