Dose of Reality – Mac and Cheese Balls Fried in Truffle Oil
4 and 3 and 2 and 1! Broad City is the funniest show on TV right now. Sadly the season 2 finale is this week and I have to wait a whole nother year to see more episodes! When I was trying to decide what to make from the show, I thought a lot about the seafood turducken from the season 1 finale, but I ended up going with the “Dose of Reality” appetizer from the 5th episode of the first season. It’s the one where they go to the pretentious rooftop party and all the food and drinks are named in a way that is trying to be political and edgy. Not only is this one of the most memorable bits from the first season, it is also a food that is right in my wheelhouse, mac and cheese fried in truffle oil!
Caramelized onions, butter, and pasta. Honestly if you stop here and just start eating you’re gonna have a good meal.. But we trek on!
Cheese, and sour cream next.
Potato flakes cause they taste good with truffle too.
Put it into a container lined and topped with parchment. Yo Bingo Bronson what are you doing here?
After it is cooled, cut out rounds.
You know the deal, flour, egg, breadcrumb.
Once they are all breaded you can start frying them up.
You want to shallow fry them because it is way too expensive to be deep frying in truffle oil.
Oh yea! These are pretty tasty. Creamy and savory in the inside with that truffle flavor you know and love giving the bread coating a nice aroma.
A little tomato sauce as dip.
We have all had fried mac and cheese, but the caramelized onion, potato, and truffle oil really sets these apart.
Dose of Reality – Mac and Cheese Balls Fried in Truffle Oil
A fried mac and cheese recipe inspired by Broad City.
Ingredients
- 1 Cup Elbow Pasta
- 1/2 Stick Butter
- 1 Small Onion diced
- 1 Cup Jack Cheese shredded
- 1/4 Cup Sour Cream
- 1/4 Cup Potato Flakes
- Truffle Oil
- Egg
- Flour
- Panko Breadcrumbs
Instructions
- Brown the onion until it is very brown, about 25 minutes. Bring water to a boil and cook pasta until al dente. Add the pasta to the onions with a few tablespoons of the cooking liquid. Kill the heat and add in the cheese and sour cream. Stir well. Add in the potato flakes. Stir to combine.
- Place the pasta mixture into a parchment lined container and top with more parchment. Pasta should be about an inch thick. Allow to cool for a few hours.
- Cut the pasta into rounds using a cookie cutter or empty can.
- Bread the pasta rounds with flour first, then egg, then flour, then more egg, and finally the breadcrumbs. Shallow fry and flip around to brown all sides.
- Serve with tomato sauce.

I know they of course wouldn’t be as delish but .. For those of us on a budget *cough cough*What oil could I use in place of truffle?
If you want to go flavored, try chile, rosemary, or basil oil.
