Dose of Reality – Mac and Cheese Balls Fried in Truffle Oil
A fried mac and cheese recipe inspired by Broad City.
- 1 Cup Elbow Pasta
- 1/2 Stick Butter
- 1 Small Onion diced
- 1 Cup Jack Cheese shredded
- 1/4 Cup Sour Cream
- 1/4 Cup Potato Flakes
- Truffle Oil
- Egg
- Flour
- Panko Breadcrumbs
Brown the onion until it is very brown, about 25 minutes. Bring water to a boil and cook pasta until al dente. Add the pasta to the onions with a few tablespoons of the cooking liquid. Kill the heat and add in the cheese and sour cream. Stir well. Add in the potato flakes. Stir to combine.
Place the pasta mixture into a parchment lined container and top with more parchment. Pasta should be about an inch thick. Allow to cool for a few hours.
Cut the pasta into rounds using a cookie cutter or empty can.
Bread the pasta rounds with flour first, then egg, then flour, then more egg, and finally the breadcrumbs. Shallow fry and flip around to brown all sides.
Serve with tomato sauce.
