4th of July Burrito

It’s been non-stop grilling at my apartment for the past couple weeks, and it is all leading up to the 4th of July this weekend.  I couldn’t wait for those 4th of july flavors though so I decided to make this burrito with all my favorite BBQ items rolled up into a convenient package. Feel free to make your favorite versions of potato salad and baked beans for this, or just buy some!  

 
 
 
I make burgers indoor year round, but there is nothing like the first time of the year when you throw them on the grill.
Once everything is ready, you just build the burrito.  Potato salad first to form a nice base, then the beans and hot dog.
Pop your burger on there next.
And top it with a quick corn salsa!  This is just grilled corn with a little bit of tomato, onion, and parsley.
This burrito is GOOOOD.  It tastes like a backyard BBQ with every bite!
It’s best to use your favorite potato salad and baked beans because it really makes it taste like home.
The little bit of fresh corn adds just enough brightness to cut through this heavy burrito.

Whether you make this in anticipation of the holiday, or afterwards with all your leftovers, this burrito is a must-eat this July!

All of your favorite 4th of July recipes rolled up into a burrito.

Ingredients

Corn Salsa

  • 2 ears corn
  • 1 tomato
  • 1/4 cup chopped parsley
  • 1/4 cup diced onion
  • 1 splash vinegar
  • salt and pepper

Burrito

  • 3 12 inch tortillas
  • 1 cup potato salad
  • 1 cup baked beans
  • 3 hot dogs
  • 1/3 pound ground beef
  • 6 slices american cheese

Instructions

  • Grill the corn and cut it off the cob. Chop all the ingredients and mix well. Season to taste with the vinegar, salt, and pepper.
  • Form the beef into 3 patties and put it on the grill with the hot dogs. Make the burger in a slightly oblong shape to fit the burrito size. Top with cheese after flipping.
  • Meanwhile get your beans and potato salad ready. Once you have everything ready to build, put your tortilla in the microwave with a damp paper towel. Heat about 20 seconds. Put it onto aluminum foil to wrap properly. Add your potato salad first, then the beans, hot dog, burger, and finally the salsa. Wrap by folding over the top and then the sides to seal it up. Use the foil to keep it tight.
