Wings That Can Make A Grown Man Cry

You might have noticed a recent trend on this blog. I have always cooked spicy, but lately I have been going a bit over the top. That’s all due to my roommate, Sal. I thought I liked spicy food until I moved in with him! Now each time I try to make it hotter and hotter, and after eating he just looks at me, shrugs his shoulders, and says “meh, it was kinda spicy.” That is not the reaction I want! Even at Hell Night this kid ate his meal stone faced. This week I decided enough is enough. I vowed to serve the hottest wings we have ever eaten, or give up the spice game forever…

Yep. 9.6. Those familiar with the scale may know that I have yet to achieve over a 7.2, and that everything over 9 is inedible to 90% of the population! These wings burned. My whole face is tingling right now despite finishing eating over 3 hours ago and having taken a shower since! The funny thing was that we both ate our first wing, looked at each other, and gave kind of an “I don’t know…” look. I thought my spice days were finished. 2 wings later, I had literal tears dripping from my face. I ran to get milk and realized my critical error not purchasing some at the grocery store. Blue cheese and carrots were my only salvation. Sal and I pushed on, finishing about 13 wings each, and he finally showed signs of pain and fatigue. Success! This didn’t stop him from scooping up remaining wing sauce with pieces of celery! Did I forget to mention that these wings were just as delicious as they were hot?

1/4 cup of Pequin Peppers ground up go into buttermilk. Soak 30 wings in the buttermilk mixture overnight.

The next day I started to make the sauce. 35 Habaneros

After you get through the heat in a habanero, it actually has a really sweet and tangy flavor.

All the habaneros in the blender with the seeds. Also toss in a banana, clove of garlic, and some cayenne sauce.  For people in Boston, if you trade out the cayenne sauce for vinegar, you get a sauce very close to the inner beauty sauce at East Coast Grill.

It blends up really smooth.

I like to fry the wings till they are very brown. About 8 minutes at 350.

After draining the wings for about 30 seconds, drop them into the sauce.

Serve with lots of celery, carrots, and blue cheese. You will need them!

Very good, but really deadly spicy. Cook at your own risk!

After about 10 wings in.

Soak the wings overnight in buttermilk with 1/4 cup of crushed dried pequin chiles.

Dry the wings and very lightly coat in flour.

Deep fry in 350 degree oil for 8 minutes until browned on the outside.

Toss in sauce of:
35 Habaneros
1 Banana
1 Clove Garlic
1/2 cup cayenne sauce
4 Tablespoons melted butter
2 tablespoons honey

  2. My stomach its killing me today but no ring of fire. These wings were mystical. And for some reason the shower made my mouth burn.

  3. Wow….that’s all I can think of. I would be under the table after one bite of those wings! They look wonderful though – love the colors of the peppers & the brightness of the sauce.

    I’ll take that as a challenge.
    I Love spicy food, too, though I’m def not as crazy as you guys. We’ll see. Next time I have a date over, I’m making these wings. Nothing like heat to get the blood flowing… if ya knowudimean?

  5. Guys, the shower just helped spread the Capsaicin, you’re lucky more of you wasn’t tingling. I’m jealous, I want wings now thanks alot guys.

  6. I think I achieved an 8 at least.
    Here’s the recipe I went with:
    soaked about 30 wings overnight in buttermilk with Mexican Chile Powder loaded in there.
    For the sauce:
    20 Habeneros (kept most of the seeds in)
    1 banana
    2 cloves garlic
    2 tbsp honey
    1 tbsp vinegar
    3/4 cup cayenne sauce
    4 tbsp melted butter
    Too bad my date didn’t show up to eat them with me 🙁
    I ate them by myself and I was lucky I didn’t have a heart attack. I didn’t run for the milk, but my face was numb, no joke and I was getting teared up. These wings are intense, yet the flavor of the zesty peppers and banana and deep fried wings is soooo good.
    Thanks Dan – this recipe is definitely getting kept and used again.
