Ugly Soup
God this soup is so ugly. The good news is that it is healthy and tastes amazing. But yea, it looks like puke. I came home from work and decided to make an easy and healthy soup with stuff that I had lying around the house, and this was the result. It’s kinda like when you are a kid and you think if you combine all the colors in the crayon box you will make this awesome new color but it just turns out greenish black. Luckily, the flavor was the opposite of ugly.
Pork to start.
Carrots, cabbage, and onion go in next. Then stock and kale.
Blend it all up, then add silken tofu.
Quinoa and the cooked pork go in next.
Yuck.
But delicious!
Just close your eyes and dig in.
Ugly Soup
Ingredients
- 1 Pound Ground Pork
- 1 Onion
- 1/2 Small Red Cabbage
- 2 Carrots
- 3 Cloves Garlic
- 2 Quarts Stock
- 1 Bunch Kale
- 3/4 Cup Quinoa
- 1/2 Cup Chopped Green Beans
- 1/2 Package Silken Tofu
Instructions
- A pound of ground pork goes in the pan, then comes out when it is nicely browned. In goes carrots, cabbage, and onion and they get sauteed until lightly browned. Add in 3 cloves garlic and cook 2 minutes. Add in 2 quarts of stock and a bunch of kale and simmer for about 45 minutes. Blend with a stick blender. Toss in chopped green beans, cooked turkey, and 3/4 cup quinoa. Simmer until the quinoa is tender. Stir in silken tofu and cook another 2 or 3 minutes before removing from heat.
Sometimes even the ugliest of things taste the best! I have no doubt in the awesome flavor of this soup =)

I bet it would look better if you keep some cabbage whole and mix it back in for some texture
You say the meat is pork in one spot and turkey in another. Just curious which it is. 🙂
I used ground pork in this, but you could use either really.
