Tempeh and Cauliflower with Noodles
I am always trying to come up with unique healthy recipes and this one was perfect on a weeknight after a long day of work. I really wanted something hearty but was trying to eat healthy. You guys know how much I love noodles and vietnamese flavors and cauliflower so as you can imagine I devoured it.
First mix the noodles with carrot and cucumber. I also added mint, cilantro, fish sauce, and lime juice.
Tempeh and cauliflower ready to go.
Brown up the tempeh and cauliflower, and add a paste of garlic, ginger, and chiles. Then some sugar goes in.
The cauliflower and tempeh are really hearty, spicy, savory and sweet, while the noodles are sour bright and fresh. They compliment each other perfectly.
I like the chewy nuttyness of the tempeh and it matches great in this dish and with the vietnamese inspired flavors.
Tempeh and Cauliflower with Noodles
Sweet and spicy tempeh and cauliflower is placed on top of a bright and tart plate of noodles.
Ingredients
- 14 Ounces Rice Stick Noodle medium wide
- 3-5 Limes
- 1/4 Cup Fish Sauce
- 2 Carrots
- 1 English Cucumber
- 1/4 Cup Chopped Mint
- 1/4 Cup Chopped Cilantro
- 1 Small Head Cauliflower
- 8 Ounces Tempeh
- 2 Cloves Garlic
- 1 Inch Piece of Ginger
- 5 Thai Chiles
- 1/3 Cup Sugar
- Splash of fish sauce
- Splash of water
- Crunchy Rice Powder optional
Instructions
- Shred the carrot and cucumber with a julienne peeler. Cook the noodles according to the package instructions. Strain and rinse. Mix with the carrot, cucumber, mint, cilantro, lime, and fish sauce.
- Blend the garlic, ginger, and chiles to form a paste. Remove the seeds if you wanna be a wimp about it.
- Break up the cauliflower and cut the tempeh into a similar size. Cook in some oil on high heat tossing occasionally to brown well. Lower the heat and add in the ginger garlic chile paste. Cook 2 minutes. Add in the sugar and cook 2 minutes stirring often and making sure not to burn the sugar. Remove from heat. Add in the splash of fish sauce and water. Stir well.
- To serve, plate the noodles and top with the cauliflower mixture. Top with the rice powder if you have it. I had some leftover and I put it on pretty much everything now.
