Casaba Melon and Mint Salsa

All these crazy new melon varieties have been showing up at the market lately. I was excited to try one, so I grabbed a casaba melon. I loved the flavor of this thing, it sort of reminded me of a cross between a honeydew and a cucumber. I also thought the stark white flesh would look great in a salsa. I served the salsa on some grilled meat along with some veggies for a super easy and light summer dinner.

Red onion, mint, and garlic, then some lime to finish it off.
This was great on some grilled sirloin!  Spicy, sweet, and refreshing.

Casaba Melon and Mint Salsa

  • 1/2 Casaba Melon
  • 5 Fresno Chiles
  • 1/2 Clove Garlic
  • 1/2 Red Onion
  • 30 Mint Leaves
  • 2 Limes

Instructions

  1. Dice all the ingredients. The melon should be a little bigger than the other ingredients. The garlic should be grated or pressed. Mix everything together with some salt and allow to sit for a half hour before serving.
