Casaba Melon and Mint Salsa

The bounty from the store. How was I NOT gonna make salsa out of this?
I love that bright white flesh next to the red chile.
Red onion, mint, and garlic, then some lime to finish it off.
This was great on some grilled sirloin! Spicy, sweet, and refreshing.
The perfect summertime grilled dinner.

Casaba Melon and Mint Salsa
- 1/2 Casaba Melon
- 5 Fresno Chiles
- 1/2 Clove Garlic
- 1/2 Red Onion
- 30 Mint Leaves
- 2 Limes
Instructions
- Dice all the ingredients. The melon should be a little bigger than the other ingredients. The garlic should be grated or pressed. Mix everything together with some salt and allow to sit for a half hour before serving.
