Casaba Melon and Mint Salsa
All these crazy new melon varieties have been showing up at the market lately. I was excited to try one, so I grabbed a casaba melon. I loved the flavor of this thing, it sort of reminded me of a cross between a honeydew and a cucumber. I also thought the stark white flesh would look great in a salsa. I served the salsa on some grilled meat along with some veggies for a super easy and light summer dinner.

Casaba Melon and Mint Salsa
This spicy refreshing melon salsa is perfect on grilled meat.
Ingredients
- 1/2 Casaba Melon
- 5 Fresno Chiles
- 1/2 Clove Garlic
- 1/2 Red Onion
- 30 Mint Leaves
- 2 Limes

- Dice all the ingredients. The melon should be a little bigger than the other ingredients. The garlic should be grated or pressed. Mix everything together with some salt and allow to sit for a half hour before serving.
