Gochujang BBQ Chicken
I had invited some friends over for a bbq but I had no idea what I was going to make. This happens sometimes but at the last minute I somehow always figure something out! I knew I wanted classic grill food and bbq chicken with potato salad was calling me. I needed to go to the asian market to grab a few items for a dish I was cooking the next day, and while I was there the flavors of this meal came together in my head. Adding kimchi to a standard potato salad really made it something special, and making a quick bbq sauce/bulgogi sauce hybrid to slather on chicken was a perfect blend of the familiar and theย foreign. To round things out, a salad that was basically a vietnameese bun, sans the bun(noodles).
So good! Tangy, sweet, and spicy, everything a bbq sauce should be.
The chicken is all skewered up with onions.
Before cooking, some games.
These are chicken thighs, so low and slow on the grill is perfect. I must have cooked these for about 50 minutes, basting and flipping often to create a perfect crust.
Sal refuses to wear shirts these days, but this being a family website, I had to photoshop one for him. Ladies, if you would like the original copies, feel free to comment and I will email them to you for private viewings.
Low and slow! I had to keep adjusting the heat because the flame would go out.
Developing the crust.
We had a nice dinner table, aka the back of Sal’s truck.
This chicken is incredible.
The salad. Basically all the ingredients of bun, without the noodles. Iceburg, carrot, cuke, peanuts, mint, fish sauce.
Good times and food all around. One secret I have to make things taste better is to cook slowly! This way everyone is that much hungrier and that much drunker. They will think anything is amazing.
Nice shirt man!
And Lorraine made cookies!
The elements in the marinade from bulgogi were gochujang, brown sugar, sesame oil, sesame seeds, garlic, ginger, and soy sauce. The elements in the marinade from bbq sauce were molasses, cider vinegar, cumin, and smoked paprika.
Looks d-lish!
Also, what is the name of that frisbee game? I played once while camping and I can’t remember the name or the rules other than you have to keep a beer in one hand.
All of this awesome, wonderful, flavorful food on this site, and you and your friends still drink that crap swill in most (if not all) of your pictures.
Come on man! If your idea of a wonderful meal was centered around Applebee’s $5 lunch special, I would not fault your beer tastes. But your culinary prowess is much greater than mine, your beer preferences should at least be on par.
I only discovered gochujang this year – so good! Have you tried the Korean fried chicken from Bon Chon??

I wanted to write an essay back to you, but instead I decided to rebut with 4 simple points.
1. I like all sorts of beers, my favorite bars have over 50 taps and I’ve been known to go missing when I enter the beer aisle at my local store, but does that mean I can’t enjoy a delicious and refreshing light beer on a hot late spring afternoon?
2. I make and purchase the food, and when people ask what to bring, I say “drinks”. What they bring is what I drink.
3. We really really like beer pong, and its not the same with “good” beer.
4. There was also a magic hat mix pack and 21st Amendment “brew free or die IPA” kicking around that day, but it didn’t make it in to any pics.

Yes, Gochujang is amazing. Its my favorite secret weapon to have in the fridge lately, and it lasts forever. And yes I have had the Korean fried chicken at Bon Chon. I loved it but I kinda wish they had a few more flavors instead of just the two. What did you think about it?
As for the name of the frisbe game Amber, I always forget the name and the rules the second I stop playing haha.
All valid points, I just happened to notice that I’ve never seen a good (to me) beer in any of your pics. It was surprising to say the least.
Also, I might be a beer snob, but I would be interested to see your ideas of beer/cocktail pairings with some of your awesome Frankenstein creations. Or some alcoholic creations of your own, you seem to have a knack.
The Frisbee game is polish horseshoes. It may have other names. I’m also disappointed by the lack of comments of my drawn in shirt. It’s summer time Dan, get with the program. Hot weather = no shirt. deal with it.
The food was awesome. I wish they still made nobel pils, that would have been a delight.
Wow, Dan you front the food cost for everything except the beer, life must be good being a food blogger/culinary artist. You make me wish I knew more about Asian food, I recently had Thai food for the first time but dunno how good it was really because I had no idea what it was supposed to taste like.
Just discovered your site today and I can tell I am going to have a lot of fun reading and re-creating … thanks!
