Herby Lamb Burgers with Feta and Avocado
I’ve been growing an herb garden for the first time in several years and it’s coming along great. My herbs are full and bushy and just begging to be used in tasty summer recipes! I actually needed to harvest a bunch of them a few days ago so that they would grow wider and more full instead of tall and lanky, so I decided to make a fresh tasting burger that incorporated a few of my favorites.
I actually wasn’t planning on taking pictures of this burger, but after I gathered all the herbs and the idea fully formed in my head, I decided to grab my camera.
Chop up the herbs and mix them into the ground lamb.
As you can see, the bread for these burgers was long ciabatta rolls, so I formed my lamb patties in a similar shape. Oh, and don’t worry about that cocktail, it’s not in the recipe.
Just a few minutes a side on a super hot grill.
Hummus and a squeeze of lemon goes on the bottom bun.
Fresh feta on top of the burger, then cucumber and avocado. Make sure you get the good kind of feta, not that pre-crumbled stuff.
Yesssssssssssss.
This burger has all the fresh bright flavors you are looking for when grilling in the summer, and the hummus and salty meat give it enough depth to really satisfy.
It’s easy to whip together but it’s a refreshing change from your everyday burger.
The textures were actually one of the best aspects of this sandwich. The creamy hummus and avocado is a great contrast to the crunchy cucumber and toasted bread. The meat has a nice chewy bite to bring everything together.
Herby Lamb Burgers with Feta and Avocado

Servings: 2 burgers
Ingredients
- 1/4 cup chopped basil
- 1/4 cup chopped mint
- 2 tablespoons chopped oregano
- 2 cloves garlic grated
- 12 ounces ground lamb
- ciabatta
- hummus
- lemon
- feta
- cucumber
- avocado
Instructions
- Mix the lamb with the herbs and garlic and a healthy pinch of salt and pepper. Do not overwork.
- Form thin burger patties. This recipe makes 2 burgers if you have long bread like me, or 3 if they are square.
- Grill the meat about 5 minutes a side on high heat. Grill the bread to toast while you grill the meat.
- Spread hummus on the bottom bread and squeeze some lemon juice on the hummus.
- Top with the burger, then the feta, then cucumber, then avocado. Top with the top bun and serve.
