Herby Coconut and Sausage Fried Rice
I had a nice relaxing weekend with my roommate where we did a ton of stuff but also had a ton of time to just chill. In between a marathon of some Orphan Black episodes we have been catching up on, we got hungry. I went to the fridge to see what we had and what sort of meal I could pull together, and this is what I came up with.
Italian sausage went surprisingly well in fried rice!
Cook some cabbage and onions way down to a nice deep brown.
Meanwhile, some coconut milk, tamari, and chile paste form the sauce.
See? Nice browned cabbage. Cauliflower in next.
Then some egg.
Finally the cooked rice. I boiled this rice in lots of water (like the way you would cook pasta) to prevent it from being sticky and clumpy in the mix.
Finally pour in that sauce.
Herbs are the last part.
Because of the coconut, chile, basil, and cilantro, this had sort of a Thai taste to it at times.
But the Italian sausage and coconut milk combo is what made it really unique.
The perfect clean out the fridge meal for a lazy Saturday. Many more Orphan Blacks were watched immediately after the cooking was finished.
Herby Coconut and Sausage Fried Rice
This fried rice has tons of fresh flavor from the herbs and a nice background sweet creaminess from the coconut.
Ingredients
- 1.5 Cups Rice
- 3 Sausages
- 1 Onion died very small
- 1 Carrot diced very small
- 1 Stick Celery diced very small
- 3 Cloves Garlic minced
- 1 Cup Chopped Cauliflower
- 2 Eggs
- 1/4 Cup Chopped Basil
- 1/4 Cup Chopped Cilantro
- 1/2 Cup Coconut Cream
- 1/4 Cup Soy Sauce or tamari for gluten free
- 1/4 Cup Sambal Oelek
- 1/4 Cup Rice Vinegar
- 2 Tablespoons Sesame Oil
Instructions
- Boil the rice like you would boil pasta. Bring lots of water to a boil, add in the rice, boil until tender, strain.
- Mix the sauce ingredients together.
- Cook the cabbage, onion, carrot, and celery until pretty browned, about 35 minutes. Add in the cauliflower and the garlic. Cook 3 minutes. Spread out the ingredients to the sides of the pan and pour in the eggs. Cook 2 minutes. Add in the rice and stir well. Cook another 3-5 minutes. Add in the sauce and cook 3 minutes. Remove from heat and stir in the herbs.
