Cubano Sandwich Stuffed Waffles

All the traditional cubano ingredients. The pork is marinated in a mojo sauce with orange, lime, cilantro, and cumin, then cooked and sliced thin. The cheese is swiss.

Preheat the Wonderffle waffle iron, then pour in the batter.

Start with ham, then cheese.

Then the pork and pickles. Top with more batter.

My favorite part of the design of the Wonderffle Waffle Iron is the scissor-like tool for removing the waffles. It’s really clever and makes the whole process super simple.

For the syrup, I mixed maple, dijon mustard, and sambol chili paste.

The waffle was perfectly cooked and the cheese was oozing out the center.

Then I dumped on the sauce. So good!

Cubano Sandwich Stuffed Waffles

Waffles stuffed with all the ingredients of a Cubano Sandwich – ham, pork, pickles, and cheese, and served with a dijon maple syrup.

Ingredients

PORK

  • 1 pound pork shoulder steaks
  • 1/2 cup orange juice
  • juice of 1 lime
  • 1/4 cup olive oil
  • 1/4 cup chopped cilantro
  • 1 tablespoon chopped fresh oregano or 1/2 tablespoon dried
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon chili flakes
  • 2 cloves garlic grated
  • 1/2 teaspoon salt

SAUCE

  • 1 cup maple syrup
  • 1/4 cup mustard
  • 1 tablespoon sambol chili paste

BATTER (FROM THE WONDERFFLE INSTRUCTION MANUAL)

  • 2 cups ap flour
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups buttermilk
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1/4 cups melted butter

EVERYTHING ELSE

  • 1/4 pound sliced ham
  • 1 cup grated swiss cheese
  • 2 dill pickles sliced thin

Instructions

  • Make the pork - Mix the pork in a large bowl with all the marinade ingredients. Allow to rest for at least 1 hour or overnight. Bring a frying pan up to medium high heat with a little oil. Add in the pork and cook to brown on each side and cook though, about 3 minutes per side depending on thickness. Move to a cutting board and cut into thin strips.
  • Make the sauce - Mix together the sauce ingredients. Taste and adjust the ratio if desired to your personal tastes.
  • Make the batter - mix all the ingredients in a large bowl until combined. Set aside.
  • Preheat the waffle iron and spray with a nonstick cooking spray. Add in some batter about halfway up. Put a few slices of ham on top, then the cheese, then pork and pickles. Push the mixture down so it is near the bottom of the iron. Top with more batter to fill it up and close the cover. Flip the iron and cook over medium heat for about 5 minutes, flipping one more time if needed to make sure both sides are golden brown and the batter is cooked throughout.
  • Top with the sauce and serve.
