Cowboy Butter Steak Fries

Crispy fries piled high with cowboy butter, steak, parsley, and cotija cheese! This is a dream comfort dinner for me! I like to amp up my cowboy butter by making it in the same pan I cooked the steaks in! This gives it so much flavor! I smothered the french fries in this decadent butter for an amazing combo of flavor.

The inspiration for this recipe

Georgina and I love to get steak frites, and have been comparing some of the best in the city. One thing about steak frites though, is I sometimes want the steak and the fries to be combined a little more. I was inspired a little by poutine, and a little by carne asada fries, to create this amazing pile of meaty potato goodness.

But if I am being truly honest, there is another inspiration. We watch a lot of britbox and there is a detective show called McDonald and Dodds where one of the detectives eats his “chips” dipped in butter. I was intrigued so I made this whole meal with that in mind.

Start with the steak

I used skirt steak and marinated it in some worcestershire sauce, garlic, spices, and honey. You could let this sit an hour or two, or as long as overnight. Then grill it to brown on both sides and cook medium well in the middle.

Right in the steak juices, add the butter. As it is melting, you can add the garlic, parsley, mustard, hot sauce, and paprika. Then some lemon juice, and the juices from the steak after it rests about 10 minutes. Stir this well, and add it to a bottle. I let it sit on the counter to cool as I prepared everything else, that way it thickens a little, but not too much.

I use frozen fries most of the time. There is no shame in it! If you wanted to do homemade fries though, this is a great recipe. To cook the frozen fries, I usually crank the oven a bit higher than the package says, and toss the fries with some oil and salt before spreading them out on the pan.

Serve the cowboy butter steak fries

I like to serve these in a big platter in the middle of the table, with side plates and fork for everyone to grab their portion. You could also build them as individual plates if you would rather. Another option is to serve everything separate so the fries don’t get soggy. For me, I make them extra crispy and I like them to get a little saturated from the butter.

The combination of flavors and textures in this loaded cowboy butter steak french fries is truly incredible! I had to generate some serious willpower to stop myself from eating wayyy too much.

Twists on this recipe

You could melt some cheese on these if you wanted, instead of doing the crumbled cotija. Some people might rather parmesan but I personally thought the cotija was perfect. You could also do homemade fries, or any other french fry shape! I usually think crinkle fries are the best for frozen/oven fries but I don’t think many people agree with me!

Ingredients

Steak and marinade

  • 1.5 pounds skirt steak
  • 2 tablespoons worcestershire sauce
  • 2 tablespoons olive oil
  • 1 tablesoon soy sauce
  • 1 tablespoon red vinegar
  • 1 tablespoon honey
  • 3 cloves garlic
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt

Cowboy butter

  • 1 stick butter
  • 2 cloves garlic minced
  • 1/4 cup chopped parsley plus more for garnish
  • 1 tablespoon mustard
  • 1 teaspoon hot sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 lemon juice of

Fries

  • 26 ounces frozen french fries
  • 1/2 cup crumbled cotija

Instructions

  • Mix the steak with the marinade ingredients. Cover and set in the fridge for at least 2 hours.
  • Preheat a large grill pan over medium high heat. Cook the steaks to brown on both sides and cook to medium in the center. About 6 minutes per side.
  • Remove the steaks and put them into a bowl. Turn the heat to low.
  • Add in all the cowboy butter ingredients, stirring and mixing as you go. After the steak has rested about 10 minutes, pour the accumulated juices from the steak bowl into the butter mixture. Stir and cook 1 minute. Remove from heat. Set aside, covered at room temperature until ready to use, shaking every 10 minutes to keep it emulsified.
  • Preheat the oven to 475. Toss the fries with some oil and salt and spread on 2 large baking sheets. Bake the fries for about 20 minutes, tossing once in the middle of cooking. (keep in mind manufacturers instructions, but I usually cook them hotter than it says on the package.)
  • Pour the fries onto a serving platter and top with the steak. Pour on the butter, then top with parsley and cotija.
