I had an ice cream at Ronnybrook Farm Dairy at Chelsea Market about a month ago that was “2 cookies and cream”. It was really clever and also really really delicious to mix chocolate chip cookies into the regular cookies and cream. Ice cream has been on the brain lately, and September is my favorite time of the year to eat ice cream, so I decided to top their flavor and double the cookie content! In addition to oreo and chocolate chip, I also mixed in peanut butter cookies, and finished it all off with a speculoos cookie spread as a swirl. This was hands down the best ice cream I have ever made! 

Ok so lets make the chocolate chip cookies first! I didn’t want to make an overly complex cookie just to put into an ice cream so I went with a fairly straightforward recipe that is pretty good but not amazing. If you ever read this blog you know that I find baking pictures to be pretty boring so lets move along quickly here. Butter and sugar mixed together, blah blah blah.

Add the eggs or whatever. Flour is next. Moving on.

Ok, so here is the cookies before baking.

My good friend Bianca at Confessions of a Chocoholic lead me to this tasty peanut butter cookie recipe which I just omitted the chunks and it came out really good. It was also very easy.

OK! on to the fun stuff. Here is the ice cream coming out of the ice cream maker.

Break up the cookies into nice big chunks.

Then stir them into the frozen ice cream. Make sure the cookies aren’t steaming hot or you will end up with soup. In fact, you are going to want to chill the cookies a bit and put your ice cream into the freezer after churning before this step.

Finally add the speculoos as the swirl. This is the step that really takes this ice cream to the next level.

Yea, that’s good stuff!

I have way too much of this stuff in my house. Seriously if you want some and live in the Boston area give me a call and I will give you a pint. I find myself grabbing a bite here and there throughout the day and it is really killing any semblance of healthy eating that I have been trying to uphold.

But it is just SOOOO good I can’t stop. The cookies retained a nice crunch and they are all just different enough that each bite seems to have a different character based on which cookie combination you are eating.

Like I said earlier, I dare someone to make an ice cream with more cookies than this! 5 cookies? 6 cookies? I’d love to see it!

 

Cookies & Cookies & Cookies & Cookies & Cream

Ingredients

  • 1 Pint Milk
  • 1 Pint Heavy Cream
  • 100 Grams Milk Powder
  • 1/8 Teaspoon Guar Gum
  • 1 Cup Sugar
  • Salt
  • 1 Teaspoon Vanilla
  • 2 Large Chocolate Chip Cookies
  • 2 Large Peanut Butter Cookies
  • 13 Oreos
  • 1/4 Cup Speculoos Spread

Instructions

  • If you don’t want to use guar gum, you can use whatever simple ice cream base you want, but this one works best for me. You can swap the guar gum with 1/4 teaspoon gelatin for a pretty good result.
  • Microwave the milk until it is very hot to the touch but be careful not to let it boil over. 3 minutes should be pretty good. In a bowl, mix the milk powder, guar gum, salt, and sugar. Whisk the powders into the hot milk to dissolve. Add the cold cream and keep whisking. You will notice it thicken slightly. Put it into the freezer until it is very cold, whisking occasionally.
  • Freeze in your ice cream maker to your manufacturers instructions. It will probably be pretty soft so get it into the freezer asap. Make sure your cookies are cold and break them up into chunks. Stir all your cookies into the ice cream and get it right back into the freezer.
  • Finally warm up your speculoos in the microwave to make it very liquid. Get your ice cream out and pour the speculoos over it. Mix it up to form the swirl. Get it back into the freezer to harden before serving!

  1. This is some serious cookie overload. Love it! Maybe I’ll just take the 40 different kinds of cookies my family makes for christmas, crumble them up, and throw them in! 🙂

  2. I like my spices in my desserts. Now you’ve got me imagining such endeavors with snicker doodle and gingerbread chunks, and possibly chai masala infused in the ice cream base. Maybe even a homemade magic shell of white chocolate, coconut oil, cinnamon leaf oil, and a bit of ground cinnamon.
