Cheesy Chili Spinach Dip
We had a photo shoot for the next cookbook this week, so I had a ton of food in my fridge. I wanted to make a little snack for some people so I used a few of the leftovers from the shoot to whip together this quick dip. The dip tasted great and took about 2 seconds to make. Make sure you use a tight meaty chili like the kind you would find on a hot dog, and not the soupy kind with lots of beans and veggies.
Chili, sour cream, and spinach. Add cheese and mix.
Put the dip into a baking dish and top with jalapenos. Let it cook a solid half hour.
So good! I feel like you can make this kind of a cheesy dip out of anything and its fun to try new combos.
Great for having people over, something everyone will love!
Serve with pita chips!
Cheesy Chili Spinach Dip
An easy dip that uses leftover chili as the base and lots of cheese to make it oozy and delicious.
Servings: 6 people
Ingredients
- 1 cup chili
- 3/4 cup sour cream
- 1/2 cup cooked spinach
- 1 cup cheddar
- 1 cup mozzarella
- pickled jalapenos
Instructions
- Preheat oven to 350.
- Mix all the ingredients except for the jalapenos.
- Place into a baking dish and top with jalapenos.
- Bake at 350 for a half hour to 45 minutes depending on the shape of your bowl. Allow to cool for 5 minutes before serving.
That dip looks insanely good!
