Celery Kale Soup

Celery root has a nice sweetness that really comes out in this soup. It seems like it’s diet time for everyone I know, and this soup fits the bill for a hearty delicious dinner that is really good for you. Happy soup Monday!

Ugly and dirty, celery root is some weird stuff.

Saute some aromatics, then add stock and the peeled celery root and kale.

This tasted kinda like broccoli cheddar soup, but had a sweet flavor from the celery root.

Hearty and delicious!

 

Celery Root and Kale Soup

Hearty winter veggies like celery root and kale make this soup creamy and filling.

Ingredients

  • 3 Celery Roots
  • 1 Bunch Kale
  • 2 Stalks Celery
  • 1 Large Carrot
  • 1 Onion
  • 2 Boxes Veggie Stock
  • 1 Cup Sharp Cheddar

Instructions

  • Saute the carrot, onion, and celery in butter. Add the stock followed by the celery root and 15 minutes later the kale. Simmer about a half hour until the celery root is soft. Blend until smooth. Mix in the cheese.

  1. I really dig this. Even though it’s quite possibly the ugliest vegetable out there, celery root is by far one of my favorites. Sort of the ugly duckling of the tuber family =)

  2. Just made this. I replaced the butter with coconut oil so what I made is closer to my detox. I also added some things I had in the fridge, namely Brussels Sprouts (sauteed with the carrots/onion) and Lemongrass. (For the Lemongrass, I kept in the pot after the veggies sauteed and then kept them in until just before I was about to blend.

    The end result is delicous! (I’m eating it now.) Very flavorful. I’m looking forward to seeing how it freezes
