Bananas Foster Cookies and Cream
It’s been really fun having access to liquid nitrogen all summer to be able to whip up new ice cream creations on the fly.  Pretty much every time I have people over I try and think of a new ice cream to make.  I was craving cookies and cream because I pretty much always am craving cookies and cream, but I wanted to put a new twist on it.  I went with bananas foster as the base flavor and mixed in the cookies at the last minute to make a flavor experience I had never tasted before but was also really familiar and comforting.
The bananas go in the pan first with some brown sugar.
 
Add the burnt bananas to the ice cream base and mix it up!  then freeze it and add your oreos last minute.
This ice cream was super dense and had a nice chewy texture.
The caramelized banana flavor was something I havnt had in ice cream before and added a really nice depth of flavor.  Using whisky instead of the usual rum imparted that little bit of extra smoke punch that took the whole thing over the edge.

Bananas Foster Cookies and Cream

This ice cream has caramelized bananas mixed right in with oreo cookies and a creamy dense ice cream base.

Ingredients

  • 1.5 Cups Whole Milk
  • 1.5 Cups Heavy Cream
  • 2 Bananas
  • 1/4 Cup Brown Sugar
  • 3/4 Cup White Sugar
  • 1.25 Cups Milk Powder
  • 1 Tiny Pinch Xanthan Gum
  • 2 Tablespoons Whiskey
  • 1 Cup Oreo Crumbles

Instructions

  • Slice the bananas in half. Put the brown sugar in a frying pan and put the bananas on top. Cook on medium heat until the sugar melts and the bananas start browning. Flip the bananas to brown on all sides but don’t burn the sugar. After this cooks for like 5 minutes, add in the whiskey and light it on fire. (be careful, etc etc disclaimer disclaimer) When the fire burns out, add the cream and swirl the pan a little but dont stir it yet. Remove from heat and stir it up and pour it into a bowl. mix in the milk powder, sugar, and xanthan gum (optional). Use a stick blender to blend it smooth. Add the milk and continue to blend smooth. Cool in the refrigerator. Chill in your ice cream machine according to the instructions. When it is done, stir in the oreo and then allow to harden in the freezer before serving.
