Bacon Coconut Noodle

There is always something great about making that first dish in your new kitchen. Learning the new space, finding out things that are great and not so great about it. Realizing things that you forgot to move or get at the store and making quick changes to the dish based on that. I made these bacon coconut noodles as the first dish at the place I moved into a few days ago and I am absolutely loving it. The kitchen and the noodles.

Like any stir fry, get everything ready to go before you start cooking. Especially in a new kitchen!

Work that wok!  My current cooking goal is to master the wok.

Zucchini is in and the wok is looking full.

Cooked rice noodles and coconut milk are in the pan next. Then some mushrooms.

Remove from heat and add cilantro and scallions.

Good plate of food! A hearty meal after a long day of unpacking.

The bacon and coconut combo is something I have never really had or explored but it was great! It was nice to see bacon in a dish with some Asian flavors going on.

Bacon coconut noodles

Ingredients

  • 14 Ounces Rice Noodles
  • 14 Ounces Coconut Milk
  • 2 Tablespoons Coconut Oil
  • 1/2 Pound Bacon Chopped
  • 1 Head Broccoli Sliced
  • 1 Zucchini Sliced into thin planks to mimic the noodles
  • 5 Ounces Mushrooms Sliced
  • 3 Cloves Garlic Grated
  • 1 Thumb Sized Chunk Ginger Grated
  • 1 Bunch Scallion Chopped
  • 1 Bunch Cilantro Chopped
  • 2 Limes 1 Juiced 1 for Garnish
  • Fish Sauce and Sriracha To Taste

Instructions

  • Bring water to a boil and remove from heat. Stir in the rice noodles and let sit for about 10 minutes or until soft. Strain and rinse well. Saute the bacon in the coconut oil until cooked and just starting to crisp up. Add in the broccoli and cook 2 minutes. Add the zucchini and cook 1 minute. Add the ginger and garlic and cook 1 minute. Add the rice noodles and stir well. Add in the coconut milk and mushrooms. Stir well and cook about 3 minutes. Add cilantro and fish sauce to taste. Remove from heat and stir in cilantro, scallions, and lime juice. Serve with lime slices.
