Rice Avocado Salad

A hearty rice and avocado salad that is great for a healthy weeknight dinner in the summer.

Ingredients

  • 2 Avocados
  • 1 Lime
  • 1 Red Pepper
  • 1 Clove Garlic
  • 1 Jalapeno
  • 1/4 Cup Chopped Cilantro
  • 1 Cup Rice
  • 1 Zucchini
  • 1 Can Black beans
  • 1 Tablespoon Sriracha
  • 1 Small Can Tuna optional

Instructions

  • Boil the rice until tender instead of cooking it the normal way, and pop in the diced zucchini during the last minute of cooking. Drain and lightly rinse with cold water to stop the cooking. Mix everything together. That is all.
