Pizza Guacamole
Guacamole flavored like pepperoni pizza, with sauteed peppers and onions, chopped pepperoni, chili flakes, and lots of parmesan cheese.

- 2 vine ripened tomatoes
- 1 teaspoon salt
- 1/4 cup diced onion
- 1 jalapeno diced
- 4 ripe avocados
- 1 teaspoon red wine vinegar
- 2 tablespoons juice from jar of pickled jalapenos
- 3 cloves garlic grated
- 2 tablespoons chopped fresh oregano
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon chili flakes
- 2 ounces sliced pepperoni plus more for garnish
- 1 cup grated parmesan cheese plus more for garnish
- good quality olive oil
Season the cut tomatoes with about 1/4 teaspoon of the salt. Stir and let sit while you cook the onion and jalapeno.
Heat a pan to high heat with some olive oil. Don't use the good one listed in the ingredients, use an every day one. Add in the diced onion and jalapeno and season with another 1/4 teaspoon of the salt. Cook about 7-10 minutes on high to char around the edges. Remove from heat and allow to cool.
Peel and remove the seeds from the avocados and add them to a large bowl. Season with the rest of the salt, and add in the vinegar, jalapeno pickle juice, and garlic. Stir to coat to prevent browning.
Add in all the rest of the ingredients except the olive oil. Strain the tomatoes and add them, and add the cooled cooked onion and jalapeno. Stir, then smash with a potato masher until chunky.
Spread out into a shallow bowl and top with the extra pepperoni, some pickled jalapenos, more chili flake, and parmesan cheese. Drizzle on the nice olive oil. Serve with chips!
