Peach Jalapeno Relish - JalaPeacho!
Sweet and spicy relish made from jalapenos, in season peaches, and shallots

- 10 jalapenos seeds removed for a mild to medium spice level, diced
- 1 peach not too ripe, diced
- 2 shallots diced
- 1 clove garlic minced
- 1/2 cup sugar
- 1/4 cup honey
- 1 teaspoon salt
- 1/4 teaspoon celery salt
- 1 cup white vinegar
Add all the ingredients to a medium sized pot and place on the stove uncovered, over medium high heat. Bring to a simmer, stir, then reduce the heat to low.
Simmer on low for about 10 minutes until the mixture thickens slightly.
Cover and allow to cool for at least 15 minutes.
Transfer to a jar and place in the fridge to cool at least another hour before using. It will thicken more as it cools.
Store in the fridge in an air tight jar for up to 3 weeks.
