- 1 pound dried beans I used half great northern, and half pinto
- 1 onion diced
- 5 cloves garlic sliced thin
- 3 jalapenos seeds removed, diced
- 6 ounces salami chopped
- 1 quart chicken stock
- 14 ounces tomato puree
- 1/4 cup worcestershire
- 2 tablespoons soy sauce
- 2 tablespoons apple cider vinegar
- 1/2 cup honey
- 1/4 cup molasses
- 1/4 cup maple syrup
- 2 tablespoons gochugaru
- 2 tablespoons chipotle powder
- 1 tablespoon cumin
- 1 tablespoon oregano
- 1/4 cup olive oil
- 1 teaspoon black pepper
- 1 teaspoon salt
Add the beans to a bowl and cover with water so that there is about 4 inches of water above the beans. Cover and let sit overnight
Drain and rinse the beans. Remove any that are just the husk or seem overly broken or weird.
Add the beans to a baking dish and add all the remaining ingredients. Stir to combine.
Put the beans into the oven at 275. Bake about 6 hours, stirring once every hour or so. Add more liquid if you need to. Cook until the beans are tender.
Once finished, taste it as stir in a little more honey if needed. I also added a pinch of salt to mine.
