Hot Honey Salami Baked Beans

Spicy sweet baked beans with lots of salami and classic bbq flavors

Ingredients

  • 1 pound dried beans I used half great northern, and half pinto
  • 1 onion diced
  • 5 cloves garlic sliced thin
  • 3 jalapenos seeds removed, diced
  • 6 ounces salami chopped
  • 1 quart chicken stock
  • 14 ounces tomato puree
  • 1/4 cup worcestershire
  • 2 tablespoons soy sauce
  • 2 tablespoons apple cider vinegar
  • 1/2 cup honey
  • 1/4 cup molasses
  • 1/4 cup maple syrup
  • 2 tablespoons gochugaru
  • 2 tablespoons chipotle powder
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 1/4 cup olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  • Add the beans to a bowl and cover with water so that there is about 4 inches of water above the beans. Cover and let sit overnight
  • Drain and rinse the beans. Remove any that are just the husk or seem overly broken or weird.
  • Add the beans to a baking dish and add all the remaining ingredients. Stir to combine.
  • Put the beans into the oven at 275. Bake about 6 hours, stirring once every hour or so. Add more liquid if you need to. Cook until the beans are tender.
  • Once finished, taste it as stir in a little more honey if needed. I also added a pinch of salt to mine.
