- 12 ounces gnocchi
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1/4 cup mayo
- 1 tablespoon mustard
- 2 tablespoons pickle juice
- 1 tablespoon hot sauce
- 1/2 cup minced red bell pepper
- 1/2 cup minced dill pickles
- 2 hardboiled eggs chopped
- 2 scallions chopped
- 1 tablespoon chopped fresh dill plus more for garnish
- 1 teaspoon smoked paprika plus more for garnish
Cook the gnocchi according to the package instructions. Sauté them in a frying pan with butter for a few minutes until lightly browning on both sides. (Sauteing them in butter might be part of the instructions, but if not, do it anyways.)
Place the gnocchi in a large bowl and add in all the ingredients except for the dill and paprika. Cover and cool in the fridge for 30 minutes.
Add in the dill and paprika and store in the fridge until ready to eat. Add more dill and paprika on top as a garnish.
