Sotteok Sotteok Pizza
The flavors of sotteok sotteok- rice cakes, sausage, and a sweet and spicy sauce, all loaded on a pizza with lots of mozzarella cheese!

Pizza Dough
- 300 grams flour
- 7.5 grams salt
- 1/2 teaspoon yeast
- 5 grams sugar
- 6 grams olive oil
- 186 grams cold water
Sotteok Sotteok Sauce
- 2 tablespoons sugar
- 2 tablespoons honey
- 1/4 cup ketchup
- 2 tablespoons dijon mustard
- 3 tablespoons soy sauce
- 2 tablespoons gochujang
- 1 tablespoon rice vinegar
- 1/4 cup water
Pizzas
- 10 ounce mini hot dogs sliced in half the long way
- 40 small Korean rice cakes
- 3 cups mozzarella cheese (preferably grated yourself)
- sesame seeds
- gochugaru
- sesame oil
Dough
Make the pizza dough in advance - mix the dough ingredients in a bowl or stand mixer. Knead in the mixer or by hand on the counter until smooth and elastic. I do mine by hand for 20 minutes. If you are using a mixer it will take 7-10 minutes. See linked recipe above for more detailed advice.
Split the dough into 2 equal parts. Form a smooth ball with each. Place into a well oiled container, making sure the whole dough ball gets a slight but even coating of oil. Cover and place into the fridge for 48-72 hours
Take the dough out of the fridge about 2 or 3 hours before you are ready to shape and use!
Prep the toppings
Cut the hot dogs in half the long way, and use a sharp knife to score the uncut side in a crosshatch pattern. Add them to a hot pan with some oil to cook slightly, adding a little color to the crosshatched side, and allowing the pattern to open up a bit. Remove from heat.
Bring a pot to a boil and cook the rice cakes until tender all the way through. Strain and toss with a little oil to avoid sticking. If they are now too big to match the size of the hot dogs, cut them, either the same way you cut the hot dogs, or just cut them in half. Either way the size and shape should be similar to the hot dogs.
Make the pizza
preheat your oven as high as it goes. 550 with a pizza steel is great. I have a pizza oven and cook at 650
Add some flour to the pizza peel and your hands. Flip the dough out of the container, shaking off excess oil. The top of your resting dough ball will be the bottom of your pizza.
Stretch the dough into a circle and place it on the peel. Brush on some of the sauce, then add cheese. Top with the hot dogs and rice cakes, making sure the crosshatched side of the hot dogs are facing up. Brush more sauce on top.
Top with a little more cheese, but not too much, you want to see the hot dogs and rice cakes on the pizza. Then top with sesame seeds and gochugaru.
Cook the pizza until the crust is beautifully browned. Spin if needed midway through cooking.
Drizzle with sesame oil and serve. Serve with gochugaru on the side so people can add more as desired.
