Smash Burger Burrito - The burgerrito
A cheeseburger stuffed inside a burrito, with a combination of burrito and burger fillings.

Rice
- 3 onions diced
- 1 tablespoon butter
- 1/2 cup black beans rinsed
- 2 cups cooked rice
Pico
- 3 tomatoes diced
- 1 cup chopped lettuce
- 1/4 cup diced red onion
- 1 jalapeno seeds removed and diced
- 1/4 cup chopped cilantro
- juice of 1 lime
- salt and pepper
Burgers
- 1 1/2 pound ground beef
- salt and pepper
- 1 tablespoon cumin
- 8 slices pepperjack cheese
Other
- 4 12in tortillas
- guac
- pickles
- sour cream
Cook the onions down in some butter for about a half hour to 45 minutes to caramelize. Stir the onions and black beans into the cooked rice. Set aside until ready to use.
mix all the pico ingredients in a large bowl and stir together. Taste and add salt or more lime if needed.
Make 8 balls of meat from the ground beef. Season with salt, pepper, and cumin. Preheat a cast iron pan to high with some oil. Cook the burger balls on one side for a minute, then roll over and smash into thin patties with your spatula. Top with cheese and stack two patties on top of each other.
Warm the tortillas, put the rice and bean mix down, then the double burger, then the desired toppings. Roll it up and wrap in foil. Eat.
