Smash Burger Burrito - The burgerrito

A cheeseburger stuffed inside a burrito, with a combination of burrito and burger fillings.

Ingredients

Rice

  • 3 onions diced
  • 1 tablespoon butter
  • 1/2 cup black beans rinsed
  • 2 cups cooked rice

Pico

  • 3 tomatoes diced
  • 1 cup chopped lettuce
  • 1/4 cup diced red onion
  • 1 jalapeno seeds removed and diced
  • 1/4 cup chopped cilantro
  • juice of 1 lime
  • salt and pepper

Burgers

  • 1 1/2 pound ground beef
  • salt and pepper
  • 1 tablespoon cumin
  • 8 slices pepperjack cheese

Other

  • 4 12in tortillas
  • guac
  • pickles
  • sour cream

Instructions

  • Cook the onions down in some butter for about a half hour to 45 minutes to caramelize. Stir the onions and black beans into the cooked rice. Set aside until ready to use.
  • mix all the pico ingredients in a large bowl and stir together. Taste and add salt or more lime if needed.
  • Make 8 balls of meat from the ground beef. Season with salt, pepper, and cumin. Preheat a cast iron pan to high with some oil. Cook the burger balls on one side for a minute, then roll over and smash into thin patties with your spatula. Top with cheese and stack two patties on top of each other.
  • Warm the tortillas, put the rice and bean mix down, then the double burger, then the desired toppings. Roll it up and wrap in foil. Eat.
